WHY YOU WILL LOVE THIS RECIPE

  • Hearty vegetable medley: Carrots, mushrooms, and pearl onions add sweet, earthy flavors and delightful textures in every bite.

  • Impresses guests easily: Despite being simple to prepare, this recipe looks and tastes gourmet, making it ideal for entertaining.

  • Perfect for make-ahead: Beef Bourguignon tastes even better the next day, allowing convenient reheating without losing flavor or texture.

  • Pairs well with sides: Serve alongside mashed potatoes, egg noodles, or crusty bread to soak up the rich, luscious sauce.

INGREDIENTS

  • 2 pounds beef chuck, cut into 2-inch cubes
  • Salt and black pepper to taste
  • 3 tablespoons olive oil
  • 6 slices bacon, chopped
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups red wine (Burgundy or Pinot Noir)
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 pound mushrooms, quartered
  • Fresh parsley for garnish

DIRECTIONS

  • Step No.1: Prepare beef and bacon
Season beef cubes with salt and pepper. In a large Dutch oven, heat benefits of olive oil and brown beef in batches. Remove and set aside. Cook chopped bacon until crisp; remove and set aside.

  • Step No.2: Cook vegetables
Add onions and carrots to the pot. Cook until softened, about 5 minutes. Add garlic and tomato paste; cook for 1 more minute.

  • Step No.3: Deglaze and combine
Pour in red wine, scraping the pot bottom to loosen browned bits. Return beef and bacon to the pot. Add beef broth, thyme, and bay leaves.

  • Step No.4: Simmer stew
Bring to a boil, then reduce heat. Cover and simmer gently for 2 to 3 hours until beef is tender.

  • Step No.5: Cook mushrooms and finish
In a separate pan, sauté mushrooms until browned. Stir into the stew 15 minutes before serving. Remove bay leaves and adjust seasoning.

TIPS FOR SUCCESS

  • Use good-quality beef: Choose chuck roast with good marbling for tenderness and flavor after slow cooking.

  • Brown beef properly: Searing creates a flavorful crust and locks juices, essential for a rich stew base.

  • Don’t skip wine: The wine’s acidity balances the richness, adding depth and authenticity to this classic dish.

  • Slow simmer is key: Low heat and long cooking tenderize beef and meld flavors without drying out the meat.

  • Peel pearl onions easily: Blanch onions in boiling water, then shock in ice water for simple peeling.

  • Thicken sauce carefully: Use flour to achieve perfect sauce thickness without lumps; stir constantly during cooking.

  • Rest stew before serving: Let stew sit 10 minutes off heat to let flavors fully develop and intensify.

VARIATIONS

  • Use other cuts: Substitute beef chuck with short ribs or brisket for slightly different texture and flavor.

  • Add red wine vinegar: A splash at the end brightens the sauce with a subtle tangy note.

  • Include root vegetables: Add parsnips or turnips with carrots for extra sweetness and hearty texture.

  • Make it gluten-free diet: Use cornstarch or gluten-free flour to thicken the sauce instead of all-purpose flour.

  • Add bacon alternatives: Use pancetta or smoked sausage if bacon is unavailable for similar smoky flavor.

  • Mushroom variety: Mix cremini and shiitake mushrooms for enhanced umami and texture in the stew.

  • Make single servings: Prepare in small Dutch ovens or ramekins for elegant individual portions.

Serve hot with mashed potatoes, buttered noodles, or crusty bread to soak up the sauce.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
