Beef Bourguignon is a classic French stew made with tender beef chunks, red wine, mushrooms, and herbs. Rich and comforting, it's perfect for cosy dinners and special occasions.
In a large Dutch oven, heat 1 tablespoon olive oil. Add bacon and cook until crispy. Remove bacon and set aside.
Sear Beef:
Season beef with salt and pepper. In batches, brown beef in the bacon fat and olive oil. Remove and set aside.
Sauté Vegetables:
Add carrots and onion to the pot. Cook for 5–7 minutes. Stir in garlic and tomato paste, then sprinkle with flour and stir to coat.
Add Liquids & Simmer:
Return beef and bacon to the pot. Pour in wine and beef broth. Add thyme and bay leaves. Bring to a simmer, cover, and cook on low for 2½ hours, or until beef is tender.
Cook Mushrooms:
In a skillet, heat butter and remaining olive oil. Sauté mushrooms until golden, then stir them into the stew during the last 15 minutes of cooking.
Serve:
Remove bay leaves. Garnish with chopped parsley and serve hot with crusty bread or mashed potatoes.
