  • Perfect for Celebrations: Whether it’s a birthday or brunch, this festive roll is sure to delight both kids and adults.

  • Customisable Decoration: Add sprinkles, fresh fruit, or candles to match any theme or colour palette.

INGREDIENTS

  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Powdered sugar (for rolling)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup finely chopped fresh strawberries
  • Sprinkles or extra strawberries for garnish (optional)

DIRECTIONS

  • Step No.1: Preheat and prepare the pan
Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper and lightly grease it.

  • Step No.2: Beat eggs and sugar
In a large bowl, beat the eggs and granulated sugar on high speed for about 5 minutes until thick and pale.

  • Step No.3: Add dry ingredients
Gently fold in the flour, baking powder, and salt using a spatula. Add vanilla extract and mix until just combined.

  • Step No.4: Bake the sponge
Pour the batter into the prepared pan and spread evenly. Bake for 10–12 minutes until the top springs back when touched.

  • Step No.5: Roll the cake
Immediately invert the cake onto a clean towel dusted with powdered sugar. Peel off the parchment and roll the cake up gently. Cool completely.

  • Step No.6: Make the filling
Whip the cream, powdered sugar, and vanilla until stiff peaks form. Fold in the chopped strawberries.

  • Step No.7: Fill and roll again
Unroll the cooled cake, spread the filling evenly, then re-roll gently. Trim the ends if needed.

  • Step No.8: Decorate and chill
Decorate with more whipped cream, sprinkles, or strawberries. Chill for at least 30 minutes before serving.

TIPS FOR SUCCESS

  • Roll While Warm: Rolling the cake while still warm prevents cracking and helps it keep its shape.

  • Use Powdered Sugar: Dust the towel with powdered sugar so the cake doesn’t stick when you roll it.

  • Don’t Overfill: Spread filling evenly and not too thick or it will squeeze out when rolling.

  • Chill Before Slicing: Chilling helps set the roll, making it easier to slice cleanly.

  • Sharp Knife for Slicing: Use a sharp serrated knife for neat slices without crushing the cake.

  • Room Temperature Eggs: Room temperature eggs whip better, creating a lighter and fluffier cake.

VARIATIONS

  • Chocolate Version: Add 2 tablespoons cocoa powder to the batter for a chocolate-strawberry twist.

  • Lemon Twist: Add lemon zest to the batter and filling for a bright citrus version.

  • Berry Mix Filling: Combine strawberries with blueberries or raspberries in the filling for more flavour and colour.

  • Cream Cheese Swirl: Mix whipped cream with a bit of softened cream cheese for a tangy filling.

  • Sprinkle Surprise: Fold colourful sprinkles into the better for funfetti-style birthday roll.

  • Jam Layer: Add a thin spread of strawberry jam before the cream filling for extra strawberry punch.

FAQ

Can I make this ahead of time?

Yes! You can prepare and refrigerate the roll a day in advance. Add decorations just before serving.

Why did my cake crack?

Cracks happen if the cake isn’t rolled while warm or if it's overbaked. Roll quickly and gently for best results.

Can I use frozen strawberries?

Fresh is best, but thawed and well-drained frozen strawberries can be used in the filling in a pinch.

What if I don’t have a jelly roll pan?

Use a rimmed baking sheet of similar size (10x15 inches). Just make sure it has low sides and is lined well.

Can I skip the filling and use jam only?

Yes, for a lighter version, simply spread with strawberry jam or preserves before rolling.

This Strawberry Birthday Cake Roll is more than just a dessert—it’s a beautiful way to make someone’s day special.

With its light sponge, fresh strawberry flavour, and creamy filling, it delivers the perfect balance of sweetness and texture.

Whether you’re planning a birthday surprise or just want to treat your family, this roll will impress without requiring complicated steps.

Its lovely swirl design and soft texture make every slice look elegant and festive.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
