Ingredients
  

For the Cake:

  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Powdered sugar for dusting

For the Filling:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • 1 cup fresh strawberries finely chopped

Instructions
 

Preheat the Oven:

  • Preheat oven to 350°F (175°C). Line a 15x10-inch jelly roll pan with parchment paper and lightly grease.

Prepare the Cake Batter:

  • Beat eggs and granulated sugar together in a large bowl until pale and fluffy. Add vanilla extract and mix. Gently fold in flour, baking powder, and salt, being careful not to deflate the mixture.

Bake the Cake:

  • Pour the batter into the prepared pan, spreading evenly. Bake for 12–15 minutes, until the cake is lightly golden and springs back when touched.

Roll the Cake:

  • While the cake is baking, place a clean kitchen towel on a flat surface and dust with powdered sugar. Once baked, immediately invert the cake onto the towel. Carefully peel off the parchment paper and, while warm, gently roll the cake with the towel. Let it cool completely.

Make the Filling:

  • Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in the chopped strawberries.

Assemble the Cake Roll:

  • Unroll the cooled cake. Spread an even layer of whipped filling on top, leaving a small border. Carefully re-roll the cake, removing the towel as you go.

Chill & Serve:

  • Chill the cake roll in the fridge for 1 hour. Slice into 1-inch pieces before serving.
