  • 3 –4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • 1 cup beef broth

  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
