They’re made from pantry-friendly ingredients like flour, cornmeal, milk, and eggs. The herb honey butter comes together in minutes with softened butter, fresh herbs, and a generous drizzle of honey.

Whether you're serving them for a holiday meal or a cozy family dinner, these Popovers are guaranteed to delight everyone at the table. The addition of cornmeal gives them a lovely golden color and a flavor reminiscent of sweet corn.

WHY YOU WILL LOVE THIS RECIPE

    • Dramatic & Impressive: Watch them puff up high in the oven with a beautiful, golden-brown, crispy shell and a tender, hollow center.

    • Simple ingredients: Made with basic pantry staples like flour, cornmeal, milk, and eggs—no fancy or hard-to-find items required.

    • Sweet & Savory Butter: The herb honey butter is the perfect finishing touch, adding a luxurious, melt-in-your-mouth flavor that complements the cornmeal.

    • Versatile Side: Pairs wonderfully with everything from roast chicken and steak to chili or a simple salad.

    • Fun to Make: It’s a rewarding baking project that’s easy enough for beginners but feels special every time.

    INGREDIENTS

    For the Popovers:

    • 1 cup all-purpose flour
    • ½ cup cornmeal
    • 1 teaspoon salt
    • 4 large eggs, at room temperature
    • 1 cup whole milk, at room temperature
    • 2 tablespoons unsalted butter, melted, plus more for greasing

    For the Herb Honey Butter:

    • ½ cup (1 stick) unsalted butter, softened
    • 2 tablespoons honey
    • 1 tablespoon finely chopped fresh chives
    • 1 teaspoon finely chopped fresh thyme
    • ¼ teaspoon salt

    DIRECTIONS

    • Step No.1: Prepare the pan and oven
Place a popover or muffin pan in the oven. Preheat the oven to 450°F (230°C). Once hot, carefully remove the pan, grease the cups generously with butter, and return it to the oven for 5 minutes to get very hot.

    • Step No.2: Make the batter
In a large bowl, whisk together the flour, cornmeal, and salt. In another bowl, whisk the eggs, milk, and melted butter until frothy. Pour the wet ingredients into the dry and whisk until just smooth; a few small lumps are okay.

    • Step No.3: Fill the hot pan
Carefully remove the hot pan from the oven. Divide the batter evenly among the prepared cups, filling each about ¾ full.

    • Step No.4: Bake until puffed and golden
Bake at 450°F (230°C) for 15 minutes. Without opening the oven door, reduce the temperature to 350°F (175°C) and bake for another 15-20 minutes, until deeply golden brown and firm to the touch.

    • Step No.5: Make the herb honey butter
While the popovers bake, mix the softened butter, honey, chives, thyme, and salt in a small bowl until well combined.

    • Step No.6: Serve immediately
Remove the popovers from the oven. Immediately poke a small hole in the top of each with a knife to let steam escape. Serve hot with a generous dollop of the herb honey butter.

    TIPS FOR SUCCESS

    • Room Temperature Ingredients: Using room-temperature eggs and milk helps the batter rise more efficiently for taller popovers.

    • Hot Pan is Crucial: Preheating the pan is non-negotiable. It’s the key to getting that initial explosive rise and crispy exterior.

    • Don’t Overmix: Mix the batter until just combined. Overmixing can develop gluten and lead to tough, chewy popovers instead of light and airy ones.

    • No Peeking: Resist the urge to open the oven door during the first 25-30 minutes of baking. The sudden drop in temperature can cause them to collapse.

    • Release Steam: Poking a hole in the top as soon as they come out of the oven helps keep them crisp by releasing the internal steam.

    VARIATIONS

    • Cheesy Popovers: Fold ½ cup of finely grated sharp cheddar or Gruyère cheese into the batter right before filling the pan.

    • Jalapeño & Cheddar: Add 1-2 tablespoons of finely chopped pickled or fresh jalapeño along with the cheese for a spicy kick.

    • Everything Bagel Seasoning: Sprinkle the tops with everything bagel seasoning right after pouring the batter into the hot pan.

    • Rosemary & garlic butter: Swap the chives and thyme in the compound butter for 1 teaspoon of finely chopped rosemary and a small minced garlic clove.

    • Sweet Version: Omit the herbs and salt from the butter and add an extra tablespoon of honey and a pinch of cinnamon for a sweet breakfast popover.

    SERVING AND STORAGE

    Serving

Serve the popovers immediately while they are hot and crisp. They are best split open and slathered with the herb honey butter. Perfect alongside roast chicken, beef stew, or a holiday dinner.

    Storage

Popovers are best eaten the day they are made. Store any leftovers in an airtight container at room temperature for 1 day. Re-crisp in a 350°F (175°C) oven for 5-10 minutes before serving.

    FAQ

Can I make the batter ahead of time?

It's not recommended. The batter is best used immediately after mixing for the highest rise. Letting it sit can deflate the air bubbles necessary for puffing.

    Why did my popovers collapse?

They likely collapsed due to underbaking, opening the oven door too early, or not poking a hole to release steam immediately after baking. Ensure they are deep golden brown and firm before removing them from the oven.

Can I use a muffin tin instead of a popover pan?

Yes, a standard muffin tin works fine. The popovers may not rise quite as dramatically, but they will still be delicious. Fill the cups about ½ to ⅔ full.

My popovers aren't hollow inside. What went wrong?

This usually means the batter was too thick or the oven wasn't hot enough. Make sure your ingredients are at room temperature and your oven is fully preheated, pan included.

Can I make the herb honey butter in advance?

Absolutely! The herb honey butter can be made up to 5 days ahead. Store it wrapped in plastic or in an airtight container in the refrigerator. Let it soften at room temperature before serving.

They prove that with a few basic ingredients and the right technique, you can create a baked good that feels refined.

Don’t be intimidated—the process is straightforward, and the reward is a basket of warm, golden popovers that will have everyone asking for the recipe.

Once you master the basic recipe, feel free to get creative with different cheeses, herbs, and seasonings to make it your own.

    About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

    — Sana
