Saad asked for these three weeks in a row before I finally sat down and wrote out the recipe properly. He calls them "taco cups" and will eat four in one sitting without blinking. I make them in a regular 12-cup muffin tin — nothing fancy — and they come out crispy on the edges, melty in the middle, and gone within about ten minutes of hitting the table.

What makes these work is the wonton wrapper shell. I tried them once with small flour tortillas pressed into the cups, and they were fine — but the wonton wrappers go crispier and hold their shape better when you stack two layers. The double-layer is the move. It gives you that actual crunch that makes these feel like a real taco and not just a pile of meat in a paper cup.

I make these on weeknights when I want something that feels fun without being a project. My husband prefers them loaded — extra salsa, sour cream, the works. Zainab picks off the green onions but eats everything else. They're also genuinely good for parties because each person gets their own little cup and there's no cutting or serving involved. One thing to set expectations on: this recipe makes 12 cupcakes. My family of four eats all of them, so if you're making these for a group, double the batch. I usually do, because making one batch only to have them disappear before I've sat down is something that has happened to me more than once.

  • Leftover taco meat works perfectly here: If I have leftover taco meat in the fridge from a previous dinner, these cupcakes are where it goes.   • Kids actually eat them: The shape helps. Something about food that comes in its own little cup makes kids more willing to try it. Saad has never once complained about these, which is notable because he complains about most things I put in front of him. The mild seasoning and melty cheese combination is hard to argue with.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning (I use Old El Paso or whatever's at Walmart)
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup salsa
  • 24 wonton wrappers (found near the tofu/produce section at most grocery stores)
  • ¼ cup chopped green onions
  • ¼ cup diced tomatoes
  • Sour cream, for topping (optional but recommended)
  • Fresh cilantro, for garnish (optional)
  • Cooking spray, to grease the muffin tin

Directions

  1. Preheat the oven: Set your oven to 375°F (190°C) and grease a 12-cup muffin tin well with cooking spray. Getting into all the edges matters here — the wonton wrappers will stick if you miss a spot.
  2. Cook the meat: Brown the ground beef in a skillet over medium heat, breaking it up as it cooks. Drain the excess grease — don't skip this step or your cupcakes will be greasy and might fall apart. Stir in the taco seasoning and ½ cup water, then simmer for about 5 minutes until the liquid absorbs and the mixture thickens up.
  3. Build the first layer: Press one wonton wrapper into each muffin cup, pressing it into the bottom and up the sides a little. Add a spoonful of the taco meat, a few black beans, a small spoonful of salsa, and a pinch of both cheeses.
  4. Add the second layer: Place a second wonton wrapper on top of the first layer — offset it slightly so the corners fan out. Repeat the filling: more meat, more beans, a little salsa, and finish with a generous layer of cheese on top. The double wrapper is what gives you that real crunch.
  5. Bake: Put the muffin tin in the oven and bake for 15 to 18 minutes. Start checking at 15 — you want the edges golden and the cheese bubbling. Pull them when the corners of the wonton wrappers are visibly crisp. If they go past 18 minutes the edges can burn fast.
  6. Cool slightly and serve: Let them sit in the tin for 5 minutes before you try to remove them. This is important — they firm up as they cool and come out cleanly. Run a butter knife around the edge of each one if they're sticking. Top with green onions, diced tomatoes, sour cream, and cilantro, and serve warm.

Tips for Success

  • Always use two wonton wrappers per cup: I made these with one wrapper the first time and they were too soft in the middle to hold the filling. Two layers gives you a sturdier shell and a much better crunch. The second wrapper offsets slightly, which also means more crispy edges sticking up around the top.

  • Drain the meat properly: Greasy meat makes greasy cupcakes that won't hold their shape. After browning, tilt the skillet and spoon out the excess fat, or carefully pour it into a heat-safe bowl. I learned this after my first batch turned soggy on the bottom — not a good look.

  • Shred your own cheese if you can: Pre-shredded cheese has anti-caking coating on it that makes it melt a little clumpier. When I have ten extra minutes, I shred from a block and the melt is noticeably smoother. That said, pre-shredded works fine if that's what you have — I use it half the time.

  • Check at 15 minutes, not 18: Every oven is different, and wonton wrappers go from golden to burnt faster than you'd expect. I check mine at the 15-minute mark and usually pull them between 15 and 16 minutes. The edges should look crisp and slightly browned — if the corners look pale, give it two more minutes.

  • Let them rest before removing: Five minutes in the tin makes a real difference. They're too soft right out of the oven and will fall apart if you try to dig them out immediately. A butter knife run around the edge after the rest helps too. Don't rush this part — it's the difference between a clean presentation and a mess.

Variations

  • Rotisserie chicken swap: Shred a store-bought rotisserie chicken, toss it with the taco seasoning (no cooking needed), and use it in place of the ground beef. This is my go-to when I want to make these even faster. Costco's rotisserie chickens are perfect for this — one chicken gives you enough meat for a double batch.

  • Vegetarian version: Skip the meat entirely and use extra black beans plus some seasoned lentils or store-bought plant-based crumbles. I season them the same way — taco seasoning and a splash of water, let it thicken. My sister-in-law is vegetarian and this is what I make when she visits. She's asked for the recipe twice.

  • Spicier version: Add diced jalapeños into the meat mixture while it cooks, and swap the Monterey Jack for pepper jack cheese. My husband prefers this version. It has a real kick without being overwhelming, and the cheese helps balance the heat. You can also add a few dashes of hot sauce directly into the salsa layer.

  • Breakfast taco cupcakes: Swap the beef for scrambled eggs, crumbled cooked bacon, and cheddar cheese. Use salsa instead of the black beans layer. A cold drink alongside is non-negotiable — we usually do a strawberry milkshake for the kids when this is a weekend dinner.

Storage

Store leftovers in an airtight container in the fridge for up to 4 days. To reheat, use an oven or air fryer at 350°F for about 8 minutes — this brings the wonton shell back to crispy. The microwave works in a pinch but the shells go soft. I actually think the flavors are better the next day once everything has settled together, so don't worry too much about making these ahead. To freeze: bake them fully, let cool completely, then freeze in a single layer before transferring to a freezer bag. Reheat from frozen at 350°F for about 15 minutes.

Can I make taco cupcakes ahead of time?

Yes — I make the taco meat a day ahead and keep it in the fridge. When it's time to eat, I assemble and bake fresh. The wonton wrappers will get soggy if you assemble them too far in advance, so keep the filling and the wrappers separate until you're ready to bake. The whole baking process is only about 20 minutes anyway, so doing it fresh isn't much extra effort.

Can I freeze taco cupcakes?

Yes, they freeze well. Bake them fully first, let them cool completely on a rack, then freeze in a single layer on a sheet pan before moving them to a freezer bag. Reheat straight from frozen in a 350°F oven for about 15 minutes. They won't be quite as crispy as fresh but they're still very good — I've done this plenty of times for quick lunches.

Do I have to use wonton wrappers?

Wonton wrappers give you the best crunch and hold their shape the cleanest. If you can't find them, small flour tortilla rounds pressed into the muffin cups will work — bake them for 5 to 7 minutes first before adding the filling. Phyllo dough is another option but it's more delicate and a little fussier to work with. Wonton wrappers are usually near the tofu or in the refrigerated produce section at most grocery stores.

Can I use ground turkey or chicken instead of beef?

Absolutely. Ground turkey is the most common swap and works exactly the same way — same seasoning, same method. Ground chicken works too but it's a little wetter, so make sure you cook it long enough for the liquid to evaporate before adding the seasoning. Both are great options if you're avoiding red meat.

Are taco cupcakes gluten-free?

Not as written, since wonton wrappers contain wheat. If you need gluten-free, look for gluten-free wonton wrappers at a specialty store, or use small rounds of corn tortilla pressed into the cups instead. Check your taco seasoning packet too — some brands contain hidden gluten, so look for one labeled gluten-free if that matters for your household.
