Ingredients
  

For the Cupcakes:

  • 12 small flour tortillas
  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup diced onions
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

For Topping:

  • Sour cream
  • Salsa
  • Chopped lettuce
  • Diced tomatoes

Instructions
 

  • Preheat the Oven: Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  • Prepare Tortilla Cups: Press each tortilla into muffin cups to form a small bowl. Bake 5–7 minutes until slightly crisp.
  • Cook the Beef: In a skillet, heat olive oil over medium heat. Add onions and sauté 2 minutes. Add ground beef and taco seasoning, cooking until browned and cooked through.
  • Assemble Cupcakes: Spoon beef mixture into tortilla cups. Top with shredded cheddar cheese. Bake another 5–8 minutes until cheese melts.
  • Add Toppings: Remove from oven and cool slightly. Top with sour cream, salsa, lettuce, and tomatoes. Serve warm.
