INGREDIENTS

  • 2 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) rotel tomatoes with green chilies
  • 1 can (15 oz) diced tomatoes
  • 1 packet (1 oz) ranch seasoning mix
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups chicken broth
  • 8 oz cream cheese, softened
  • ½ cup shredded cheddar cheese (optional)
  • Fresh cilantro and tortilla chips for garnish

DIRECTIONS

  • Step No.1: Prepare the Crockpot
Lightly grease the slow cooker with cooking spray or a little oil. Place the chicken breasts at the bottom of the Crockpot, ensuring they are evenly spaced for even cooking.

  • Step No.2: Add the Ingredients
Pour in the black beans, corn, diced tomatoes, and Rotel tomatoes over the chicken.

  • Sprinkle in the ranch seasoning mix, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.

  • Stir gently to distribute the seasonings throughout the mixture.

  • Step No.3: Pour in the Broth and Start Cooking
Add the chicken broth to the Crockpot, making sure the liquid is evenly spread around the ingredients.

  • Cover with the lid and cook on low for 6-8 hours or high for 3-4 hours, allowing the flavors to meld together and the chicken to become tender.

  • Step No.4: Shred the Chicken
Once the chicken is fully cooked, carefully remove it from the Crockpot and place it on a cutting board.

  • Use two forks to shred it into bite-sized pieces, then return the shredded chicken to the slow cooker, stirring it back into the chili.

  • Step No.5: Add the Cream Cheese
Cut the softened cream cheese into cubes and add them to the Crockpot.

  • Stir well, letting the heat gradually melt the cheese into the broth, creating a smooth and creamy texture.

  • Let it cook for an additional 10-15 minutes, stirring occasionally until thoroughly combined.

  • Step No.6: Finish and Serve
Stir in the shredded cheddar cheese if using, then ladle the chili into bowls.

  • Garnish with fresh cilantro, tortilla chips, or an extra sprinkle of cheese. Serve warm and enjoy!

TIPS FOR SUCCESS

  • Use Softened Cream Cheese: This helps it melt evenly into the chili without clumping.

  • Shred Chicken Easily: Use a hand mixer for quick and effortless shredding.

  • Adjust Spice Level: Add extra chili powder or cayenne pepper for a spicier kick.

  • Let It Simmer: Allowing the chili to sit for 10 minutes after cooking enhances the flavors.

  • Thicken the Chili: If you prefer a thicker consistency, mash some of the beans before serving.

  • Low-Sodium Option: Use low-sodium broth and seasonings to control salt levels.

VARIATIONS

  • Make It Spicy: Add jalapeños or use spicy Rotel tomatoes for extra heat.

  • Use Different Beans: Swap black beans for kidney or pinto beans.

  • vegetarian diet Version: Skip the chicken and add extra beans and bell peppers.

  • Add More Protein: Stir in cooked sausage or bacon for a smoky twist.

  • Dairy-Free Option: Use dairy-free cream cheese and skip the cheddar.

  • Slow Cooker to Stovetop: Cook on the stovetop over medium heat for about 30 minutes.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
