Chicken breasts cook quickly — 5–6 minutes per side in a hot pan — but dry out the moment they are overcooked, so pounding them to an even thickness and using an instant-read thermometer to pull them at exactly 165°F is essential. Chicken thighs are far more forgiving — their higher fat content means they stay juicy even if cooked a little longer, and they reward high-heat searing with beautifully crispy skin. Chicken tenders cook fastest of all and are perfect for quick frying and air frying applications. For braising and one-pan recipes with longer cook times, bone-in pieces — drumsticks and thighs — deliver the most flavour as the bones add richness to the surrounding sauce.

How do I get a perfectly crispy crust on pan-fried chicken?

Four things matter above everything else. First, dry the chicken completely — moisture on the surface steams the coating instead of frying it, preventing any real crispiness from developing. Second, press the breadcrumbs firmly into the chicken — a half-hearted coating will fall off in the pan. Third, the oil must be properly hot before the chicken goes in — test by dropping a breadcrumb in, and if it sizzles actively, the oil is ready. Fourth, do not move the chicken once it is in the pan — leave it completely undisturbed for the full cooking time on the first side so a proper golden crust can form. Finally, always drain on a wire rack rather than paper towels, as the rack allows air circulation and keeps the bottom just as crispy as the top.

How do I prevent pork from drying out?
