How do I know when baked fish is done?

The most reliable method for testing baked fish is the fork test — insert a fork or the tip of a thin knife at the thickest part of the fillet and gently twist. If the fish flakes apart easily and separates into clean, opaque layers, it is done. If it resists and looks translucent, it needs more time. For salmon specifically, many people prefer it cooked to medium — when the very centre of the thickest part is still slightly translucent and the internal temperature is 125–130°F rather than the USDA recommended 145°F for fully cooked. At 145°F salmon is fully cooked but can be on the dry side. A meat thermometer inserted at the thickest point is the most accurate tool. For thinner white fish fillets like tilapia or flounder, the fork test alone is sufficient — they cook quickly and evenly. Visual cues are also helpful: fish turns from translucent to opaque as it cooks and will pull away slightly from the skin when done.

What is the difference between baking and broiling fish?

Baking and broiling are both oven methods but they cook food very differently. Baking surrounds the fish with ambient heat from all sides, cooking it gently and evenly — it is the most reliable method for achieving consistently moist, fully cooked fish throughout. Cod is an excellent baking fish that develops a beautiful flaky texture and absorbs flavours easily — it benefits particularly from a crust or sauce. Tilapia bakes quickly due to its thin fillets and its mild flavour makes it incredibly versatile. Swordfish and corvina are excellent for baking because their firm, meaty texture holds up well. Very thin or delicate fish like sole or flounder require shorter baking times and benefit from a protective coating like parmesan or breadcrumbs. Fish that are not ideal for baking include very thin fillets that dry out quickly and strongly flavoured oily fish that can become overpowering with prolonged oven heat — these are better suited to pan-searing or grilling.
