Directions

  1. Preheat and prep the dish: Set your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or butter. Getting the dish well-greased matters — the first time I made this I was light with the spray and the bottom layer stuck. A solid coat of butter around the sides and bottom makes cleanup much easier.
  2. Whisk the egg mixture: In a medium bowl, whisk together the eggs, milk, sour cream, garlic powder, cumin, salt, and black pepper until completely smooth. The sour cream needs a good minute of whisking to break down — don't rush this step or you'll get small clumps of it in the final bake. The mixture should look pale and uniform when it's ready.

  4. Repeat the layers: Add another 2 tortillas, another third of the tomatoes and cheeses, and another third of the egg mixture. Repeat one more time with the remaining tortillas, tomatoes, and egg mixture. Finish by scattering the remaining cheese across the very top — this is what gives you that golden, slightly crispy cheese layer on top.
  5. Cover and bake: Cover the dish tightly with foil and bake for 30 minutes. Then remove the foil and bake for another 5–10 minutes until the top is golden and the eggs are fully set. You'll know it's done when there's no jiggle in the center when you gently shake the dish.
  6. Rest before slicing: Let the bake sit for 5–10 minutes before cutting into it. I know it's hard to wait when it smells like that, but slicing too early means the layers slide apart. A short rest lets everything firm up so you get clean, stackable pieces.

Tips for Success

  • Drain the tomatoes properly: I learned this the hard way on my second attempt — I drained the can of Rotel but not thoroughly enough, and the excess liquid made the bottom layer soggy. Press the tomatoes against the side of the strainer with a spoon and let them sit for a minute. It makes a real difference in the final texture.

  • Don't skip the foil for the first 30 minutes: Baking covered lets the egg mixture cook through gently without the top browning too fast. If you bake uncovered the whole time, the cheese on top can get overdone while the center is still wet. Remove the foil only for the last 5–10 minutes to get that golden top layer.

  • Whisk the sour cream in thoroughly: Sour cream is thicker than milk so it doesn't incorporate instantly. I whisk the eggs and sour cream together first before adding the milk and spices. This gives you a smooth, even custard rather than streaks of unblended sour cream in the bake.

  • Pre-cook any raw vegetables you're adding: If you want to throw in onions, bell peppers, or mushrooms, sauté them first for a few minutes. Raw vegetables release water as they bake, which adds moisture you don't want. I found this out after adding raw peppers once and ending up with a watery middle section.

  • If making ahead, add an extra 5 minutes to the bake time: When the casserole goes into the oven cold straight from the fridge, it takes a little longer to heat through. I add about 5 minutes to the covered baking time and check the center with a toothpick before removing the foil. If it comes out clean, you're ready to uncover and brown the top.

  • Add cooked chorizo or sausage: Brown about ½ cup of crumbled chorizo or breakfast sausage and scatter it between the layers along with the cheese and tomatoes.   • Spice it up: Add a diced jalapeño (seeds removed if you want mild, seeds in if you want heat) between the layers, and use pepper jack for both cheeses instead of cheddar and Monterey Jack. A few dashes of hot sauce in the egg mixture also works well. My husband does this every single time.
