This egg tortilla bake is a layered breakfast casserole made with eggs, tortillas, cheese, and your favorite add-ins. It’s easy, satisfying, and perfect for feeding a crowd or prepping ahead for busy mornings.
110 oz can diced tomatoes with green chiles, drained
1cupshredded cheddar cheese
1cupshredded Monterey Jack cheese
1teaspoongarlic powder
½teaspoonground cumin
½teaspoonsalt
¼teaspoonblack pepper
6small flour tortillas
1tablespoonchopped fresh cilantrooptional, for garnish
Cooking spray or butterfor greasing the dish
Instructions
Preheat Oven:
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
Whisk Mixture:
In a bowl, whisk together eggs, milk, sour cream, garlic powder, cumin, salt, and pepper until smooth.
Assemble Layers:
Place 2 tortillas at the bottom of the dish. Sprinkle with ⅓ of the tomatoes and cheeses. Pour ⅓ of the egg mixture over top. Repeat the layers two more times, ending with cheese on top.
Bake:
Cover with foil and bake for 30 minutes. Remove foil and bake an additional 5–10 minutes, until set and golden.
Cool & Serve:
Let stand 5–10 minutes before slicing. Garnish with cilantro if desired.
