How do I get the most out of a zucchini glut?

The most important technique for managing an abundance of zucchini is knowing when to squeeze and when not to. For baked goods like zucchini bread, muffins, and cakes, squeeze the grated zucchini firmly in a clean kitchen towel to remove about half the moisture — leaving some moisture is what keeps these baked goods so wonderfully moist and tender. For fritters, pancakes, and the zucchini slice, squeeze as much moisture out as possible so the batter firms up and crisps properly. For pasta dishes, roasting, and gratin-style bakes, no squeezing is needed as the moisture cooks off in the pan or oven. Grated zucchini can also be frozen in pre-measured portions for baking use all year round — freeze in 1-cup portions in zip-lock bags for up to 3 months.

What size zucchini is best for cooking?

Medium zucchini — about 6–8 inches long — are ideal for almost every recipe. They have the best flavour, the most tender flesh, and thin enough skins that peeling is unnecessary. Large zucchini (the ones that sneak up on you in the garden) can absolutely be used in baked goods like breads, cakes, and muffins where they are grated — simply scoop out the seedy centre before grating as the seeds can be watery and bitter. Very large zucchini also work well stuffed and baked. Baby zucchini are wonderful left whole or halved and grilled or roasted — their thin skins and delicate flesh make them particularly prized for the pasta alla Nerano and the tomato zucchini bake.

Are there good substitutes for zucchini in these recipes?

In most of these recipes, yellow summer squash is the most direct substitute for zucchini — it has almost identical moisture content, texture, and flavour and can be swapped one-for-one. For the baked goods, grated carrot or grated apple can substitute for the zucchini, though both add their own distinct flavour. In the pasta alla Nerano and the tomato bake, thin slices of yellow squash or even thinly sliced eggplant work beautifully. For the fritters and pancakes, grated sweet potato or parsnip can substitute, though the cooking time may need to be increased slightly as these are denser vegetables. In the baba ganoush, eggplant is the original and most traditional choice and can substitute directly for the zucchini.
