Summer in our house is gloriously, exhaustingly active.

Saad's at swim camp from 9 AM to 3 PM most weeks, Zainab does day camp from 8:30 to 4, my husband still works a full schedule, and weekends disappear into pool trips, family barbecues at his cousin's house, and the occasional drive to the lake.

By 5 PM most weekdays, the kids are sunburned, salty, hungry, and one cracker away from a meltdown — and I'm walking in the door from running errands and have approximately 30 minutes to feed them before bedtime starts.

Dump-and-bake casseroles are the dinner solution that saved my summer two years ago and now anchors the entire June-through-August dinner rotation.

The system is simple — assemble the entire casserole the night before (15 minutes of effort), cover and refrigerate overnight, slide into the oven when you walk in the door the next day, and dinner is on the table 45-50 minutes later with zero stress and zero decision-making in the moment.

The "prep the night before" trick also genuinely improves most casseroles — the overnight refrigeration lets flavors meld together in a way that day-of assembly can't replicate, which is the same principle my mother in Pakistan used when she'd marinate meat overnight for the next day's biryani or curry.

This roundup is 18 of our family's most-repeated summer casseroles — chicken bakes, pasta casseroles, Mexican enchilada-style dishes, breakfast egg bakes that double as easy dinners, and a few Pakistani-American fusion casseroles that grew out of my mother's recipes.

Every recipe assembles in under 20 minutes (most are 15 minutes), refrigerates overnight for at least 8 hours, and bakes in 35-50 minutes — so dinner is ready by 6:30 PM even on the messiest swim-camp days.

Most of them also feed 6-8 people generously, which means leftovers for lunches the next day — my husband takes leftover casserole portions to work twice a week through summer.

A few of these casseroles also freeze well in the assembled-but-unbaked state for up to 2 months, which is the deeper meal-prep level if you want to spend one weekend afternoon prepping for the next 6-8 weeks of dinners.

18. Dump-and-Bake Buffalo Chicken Pasta
