15. Chicken Biryani

Ingredients:

  • 2 lbs chicken, cut into pieces
  • 3 cups basmati rice, soaked
  • 2 onions, thinly sliced
  • 1 cup yogurt
  • 2 tablespoon ginger-garlic paste
  • Whole spices: bay leaf, cardamom, cloves, cinnamon
  • 1 teaspoon turmeric benefits, red chili, garam masala, salt
  • Saffron soaked in milk, fresh mint, cilantro

Instructions:

  1. Marinate chicken with yogurt, ginger-health benefits of garlic paste, and spices for 1 hour.
  2. Fry onions until golden. Cook marinated chicken until oil separates.
  3. Layer partially cooked rice over chicken. Top with fried onions, saffron milk, mint, cilantro. Dum cook for 20 minutes.

Ingredients:

  • 3 cups all-purpose flour
  • ½ cup warm milk
  • ½ cup yogurt
  • 2 tablespoon sugar
  • 1 packet instant yeast
  • ¼ cup oil or melted ghee
  • 1 teaspoon salt, garlic butter for brushing

Instructions:

  1. Mix warm milk, sugar, yeast. Let sit 5 minutes until frothy.
  2. Add flour, yogurt, oil, salt. Knead into soft dough. Rise 1 hour.
  3. Roll into ovals. Cook on hot skillet until bubbly, then flip. Brush with garlic butter.

  • 2 onions, sliced
  • 1 cup yogurt
  • 2 tablespoon ginger-garlic paste
  • 2 teaspoon Kashmiri red chili powder
  • 1 teaspoon fennel powder, dry ginger powder, garam masala
  • 4 cardamom, 4 cloves, 1 cinnamon stick
  • ½ cup oil or ghee, fresh cilantro

Instructions:

  1. Brown mutton in ghee. Remove and set aside.
  2. Fry whole spices and onions until golden. Add ginger-garlic and spice powders.
  3. Add mutton back with yogurt. Simmer covered 1.5 hours until meat is tender and gravy thickens. Garnish with cilantro.

7. Zarda (Sweet Saffron Rice)

Zarda is a fragrant, golden sweet rice dish made with saffron, sugar, nuts, and dried fruits. A must-have dessert for any Eid celebration!

Ingredients:

  • 2 cups basmati rice
  • 1½ cups sugar
  • ½ cup ghee
  • Pinch of saffron strands soaked in milk
  • 4 cardamom pods
  • 2 tablespoon almonds, cashews, pistachios
  • 2 tablespoon raisins, orange food color (optional)

Instructions:

  1. Cook rice until 70% done. Drain and set aside.
  2. Heat ghee, fry nuts and raisins. Remove and set aside.
  3. In same ghee, layer rice, sugar, saffron milk, cardamom, fried nuts. Cover and dum cook on low heat for 15 minutes. Gently fluff and serve.

6. Baklava

This Baklava is layers of buttery phyllo, honey-sweet nuts, and fragrant syrup. Crispy, sticky, and absolutely irresistible. The perfect sweet ending to any Eid meal!

Ingredients:

  • 1 package phyllo dough, thawed
  • 2 cups mixed walnuts and pistachios, finely chopped
  • 1 cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • ½ cup honey
  • 1 cup water
  • 1 teaspoon vanilla, 1 teaspoon lemon juice

Instructions:

  1. Mix nuts with cinnamon. Layer phyllo in a pan, brushing each sheet with butter, sprinkling nuts every few layers.
  2. Cut into diamonds. Bake at 350°F for 45 minutes until golden.
  3. Boil sugar, water, honey, vanilla, lemon juice into syrup. Pour over hot baklava. Cool completely before serving.

5. Haleem

This Haleem is a slow-cooked stew of wheat, barley, lentils, and tender meat. Topped with fried onions, ginger, and fresh coriander. Pure comfort food!

Ingredients:

  • 1 lb boneless chicken or mutton
  • 1 cup cracked wheat (dalia)
  • ¼ cup barley, ¼ cup yellow lentils (chana dal)
  • 2 onions, fried for topping
  • 2 tablespoon ginger-garlic paste
  • 1 teaspoon garam masala, red chili, turmeric
  • Garnish: ginger, green chilies, cilantro, lemon

Instructions:

  1. Soak wheat, barley, and lentils overnight. Cook with meat, ginger-garlic, spices, and water for 4-5 hours until everything is super tender.
  2. Shred the meat and whisk mixture until smooth and porridge-like.
  3. Top with fried onions, ginger, green chilies, cilantro, and a squeeze of lemon. Serve hot with naan.

4. Chapli Kebab

These Chapli Kebabs are flat, crispy, and packed with bold flavors! Ground beef mixed with spices, tomatoes, and pomegranate seeds. A Pashtun favorite!

Ingredients:

  • 2 lbs ground beef (80/20)
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 tablespoon coriander seeds, crushed
  • 1 tablespoon pomegranate seeds (anardana), crushed
  • 2 green chilies, 1 egg, ¼ cup cilantro
  • 1 teaspoon cumin, red chili, salt, garam masala

Instructions:

  1. Mix all ingredients gently. Shape into flat patties.
  2. Pan-fry on medium heat with oil for 4-5 minutes per side until crispy and cooked through.
  3. Serve hot with naan, yogurt sauce, and fresh salad.

3. Gulab Jamun

These Gulab Jamun are soft, spongy, and soaked in rose-scented sugar syrup. The most beloved Eid dessert! Make them from scratch or use mix — either way, they're heavenly!

Ingredients:

  • 1 cup milk powder
  • ¼ cup all-purpose flour
  • ¼ teaspoon baking soda
  • 2 tablespoon ghee
  • 3-4 tablespoon milk (to make dough)
  • Oil for deep frying
  • For syrup: 2 cups sugar, 2 cups water, 4 cardamom pods, 1 teaspoon rose water

Instructions:

  1. Make syrup: boil sugar, water, cardamom until slightly sticky. Add rose water.
  2. Mix dry ingredients, rub in ghee, add milk to form soft dough. Roll into small smooth balls.
  3. Deep fry on low heat until golden brown. Soak in warm syrup for 2 hours. Serve warm or room temperature.

2. Chicken Karahi

This Chicken Karahi is a Pakistani classic — cooked in a wok with fresh tomatoes, ginger, green chilies, and bold spices. Serve immediately with naan. So flavorful!

Ingredients:

  • 2 lbs chicken, bone-in pieces
  • 4 tomatoes, pureed
  • 2 tablespoon ginger-garlic paste
