Meatloaf with ketchup glaze on a plate

A juicy, tender beef and pork meatloaf with a sweet and tangy ketchup glaze that caramelizes beautifully in the oven. The ultimate Dad-approved classic comfort dinner that slices perfectly and tastes even better the next day.

Ingredients:

  • 1 lb ground beef (80/20)
  • ½ lb ground pork
  • ½ cup breadcrumbs
  • ⅓ cup whole milk
  • 2 large eggs, beaten
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Glaze: ½ cup ketchup, 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat oven to 350°F. In a large bowl combine the ground beef, pork, breadcrumbs, milk, eggs, onion, health benefits of garlic, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined — do not overwork.
  2. Shape into a loaf on a parchment-lined baking sheet or press into a loaf pan.
  3. Whisk together the ketchup, brown sugar, and apple cider vinegar. Spread half over the top of the meatloaf.
  4. Bake for 45 minutes. Spread the remaining glaze over the top and bake for another 15–20 minutes until the internal temperature reaches 160°F. Rest 10 minutes before slicing.

13. Creamy Chicken Pot Pie

Chicken pot pie with golden crust

A deeply comforting classic with a flaky, buttery golden crust filled with creamy chicken, sweet peas, carrots, and tender potatoes in a rich herb sauce. Pure homestyle comfort food that everyone around the table will love.

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen peas
  • 2 carrots, diced
  • 2 medium potatoes, diced and parboiled
  • 3 tablespoons butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1½ cups chicken broth
  • 1 cup heavy cream or whole milk
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 sheets store-bought pie crust or puff pastry
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat oven to 400°F. Melt butter in a large oven-safe skillet over medium heat. Sauté the onion and carrots for 5 minutes. Add health benefits of garlic and cook 1 minute. Whisk in flour and cook for 2 minutes.
  2. Gradually pour in the chicken broth and cream, whisking until smooth and thickened. Stir in the chicken, peas, potatoes, thyme, salt, and pepper. Remove from heat.
  3. Line a 9-inch pie dish with one sheet of pastry. Pour in the filling. Cover with the second sheet, crimp the edges, and cut a few slits in the top. Brush with egg wash.
  4. Bake for 30–35 minutes until the crust is deep golden and the filling is bubbling. Rest 10 minutes before serving.

12. Smoked Brisket (Texas Style)

Smoked brisket sliced on a cutting board

The king of BBQ — a whole packer brisket rubbed with coarse salt and black pepper, smoked low and slow until a deep peppery bark forms and the meat is fall-apart tender with a gorgeous smoke ring. Low and slow is the only way to go.

Ingredients:

  • 1 whole packer brisket (12–14 lbs), fat cap trimmed to ¼ inch
  • ¼ cup coarse kosher salt
  • ¼ cup coarsely ground black pepper
  • 1 tablespoon garlic powder (optional)
  • Post oak, hickory, or pecan wood for smoking
  • Yellow mustard, as a binder (optional)

Instructions:

  1. Trim the brisket and optionally rub all over with a thin layer of yellow mustard as a binder. Generously coat all sides with the salt and pepper rub. Let sit at room temperature for 1 hour before smoking.
  2. Preheat smoker to 225°F. Place the brisket fat-side up on the smoker. Smoke for 6–8 hours until a dark bark has formed and the internal temperature reaches around 165°F.
  3. Wrap tightly in butcher paper or foil. Return to the smoker and continue cooking at 225°F until the internal temperature reaches 200–205°F and a skewer slides in with no resistance — about 4–6 more hours.
  4. Rest the wrapped brisket in a cooler for at least 1 hour before slicing. Slice against the grain and serve immediately.

11. Loaded Baked Potato Casserole

Loaded baked potato casserole in a baking dish

All the flavours of a loaded baked potato in a big, shareable casserole — creamy mashed potatoes loaded with bacon, sharp cheddar, sour cream, and chives, baked until bubbly and golden on top. The ultimate comfort side dish that steals the show.

Ingredients:

  • 3 lbs russet potatoes, peeled and cubed
  • ½ cup sour cream
  • 4 tablespoons butter
  • ½ cup whole milk or cream
  • 1½ cups sharp cheddar cheese, shredded and divided
  • 6 strips bacon, cooked and crumbled
  • Salt and pepper, to taste
  • Fresh chives, sliced, for topping
  • Extra sour cream, for serving

Instructions:

  1. Preheat oven to 375°F. Boil the potato cubes in salted water for 15–18 minutes until very tender. Drain well.
  2. Mash the potatoes with butter, sour cream, and milk until smooth and creamy. Season with salt and pepper. Fold in 1 cup of the shredded cheddar and half the bacon.
  3. Spread into a greased 9x13-inch baking dish. Top with the remaining cheddar and bacon.
  4. Bake for 20–25 minutes until the top is golden and bubbling. Scatter fresh chives over the top and serve with extra sour cream on the side.

10. Crispy Fried Chicken (Buttermilk Brined)

Crispy fried chicken pieces on a rack

Southern-style buttermilk fried chicken with an incredibly crispy, seasoned crust and juicy, tender meat inside. Brining in buttermilk overnight is the non-negotiable secret — it tenderizes the meat and makes every piece outrageously flavourful. Better than any takeout.

Ingredients:

  • 3–4 lbs bone-in skin-on chicken pieces (legs, thighs, breasts)
  • 2 cups buttermilk
  • 1 tablespoon hot sauce
  • 2 cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Oil for frying (peanut or vegetable)

Instructions:

  1. Combine the buttermilk and hot sauce. Add the chicken pieces, cover, and refrigerate for at least 4 hours — overnight is best.
  2. Whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper in a large bowl.
  3. Remove the chicken from the buttermilk (let excess drip off) and dredge each piece thoroughly in the seasoned flour, pressing firmly to coat. Let sit on a rack for 10 minutes.
  4. Heat oil to 325°F in a large heavy pot or cast iron skillet. Fry the chicken in batches for 12–15 minutes per side until deep golden and the internal temperature reaches 165°F. Drain on a wire rack and serve immediately.

9. Philly Cheesesteak Casserole

  • 2 tablespoons olive oil

  • Salt and pepper, to taste
  • 6 slices provolone cheese
  • 4 large eggs, beaten
  • ½ cup heavy cream

Instructions:

  1. Preheat oven to 350°F. Heat benefits of olive oil in a large skillet over high heat. Season the steak with salt and pepper and sear quickly in batches until browned. Transfer to a greased 9x13-inch baking dish.
  2. In the same skillet, sauté the peppers, onion, and mushrooms for 6–8 minutes until softened. Add garlic and Worcestershire sauce and cook 1 more minute. Add to the baking dish and toss with the steak.
  3. Whisk together the eggs and heavy cream. Pour evenly over the steak and vegetable mixture. Lay the provolone slices over the top to cover.
  4. Bake for 20–25 minutes until the egg is set and the cheese is melted and golden. Serve immediately.

  2. In the same skillet, sauté the peppers and onion for 6–8 minutes until softened and lightly caramelized. Add the garlic and italian seasoning and cook for 1 more minute.
  3. Return the sliced sausage to the pan. Pour in the marinara sauce and stir to combine. Simmer for 8–10 minutes until everything is heated through and the sauce has thickened slightly.
  4. Season with salt and pepper. Serve on hoagie rolls or over pasta, topped with fresh basil and parmesan.

  3. Return the beef to the pot. Add the broth, Worcestershire sauce, thyme, and bay leaves. Bring to a boil, then reduce to a gentle simmer. Cover and cook for 1 hour.
  4. Add the carrots, potatoes, and parsnips. Cook uncovered for 30–40 minutes until the vegetables and beef are tender. Stir in the cornstarch slurry to thicken. Remove bay leaves and serve.

FAQs

What are the best make-ahead Father's Day dinner recipes?

The beef stew, chicken pot pie filling, meatloaf, and tuna noodle casserole all reheat beautifully and can be fully prepared 1–2 days ahead. The peanut butter chocolate pie must be made at least 4 hours ahead and keeps in the fridge for up to 3 days. Smoked brisket is often better the next day after resting overnight — simply slice and reheat gently in foil with a splash of broth.

What sides pair best with these hearty mains?

The meatloaf, fried chicken, and sausage and peppers all pair beautifully with mashed potatoes, green beans, or coleslaw. The brisket is perfect with baked beans, cornbread, and potato salad. The beef stew and chicken and dumplings are complete meals on their own but go wonderfully with warm crusty bread for soaking up the gravy. The Philly cheesesteak casserole pairs well with a simple green salad.

How do I get the crispiest fried chicken at home?

Three things make the biggest difference: a long buttermilk brine (overnight is ideal), letting the coated chicken rest on a rack for 10 minutes before frying so the coating adheres, and maintaining the oil temperature at 325°F throughout cooking. Too hot and the outside burns before the inside is cooked. Use a meat thermometer and fry in small batches to keep the oil temperature stable.

Can I make the smoked brisket without a smoker?

Yes! The oven method works well for a tender, flavourful brisket even without the smoke ring. Rub the brisket with the salt and pepper mixture, sear on all sides in a hot Dutch oven, then add a cup of beef broth, cover tightly, and cook at 275°F for 4–5 hours until fork-tender. For a hint of smoke, add 1 teaspoon of liquid smoke to the rub or braising liquid.

What is the secret to fluffy dumplings in chicken and dumplings?

Two non-negotiables: do not overmix the dumpling batter (stir just until combined — lumps are fine) and do not lift the lid while the dumplings cook. The trapped steam is what makes them light and fluffy rather than dense and gummy. Drop the batter into a gently simmering (not boiling) stew, cover immediately, and cook on low for a full 15 minutes without peeking.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.
