Wet chicken means the coating slides around instead of sticking. I just press paper towels on both sides for about 10 seconds — it takes nothing and it makes a real difference in how the sauce adheres during baking.

  • Use a thick Caesar dressing: The first time I made this, I grabbed a thin vinaigrette-style Caesar and the coating basically slid off the chicken into a puddle at the bottom of the pan. Can I make this ahead of time?
