Directions

  2. Cook the quinoa: Bring 2 cups of water to a boil in a medium saucepan. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for 15 minutes until the water is fully absorbed. Fluff with a fork and spread it out on a sheet pan or large plate to cool faster — don't skip this step or the salad gets soggy.
  3. Prep the vegetables: While the quinoa cools, halve the cherry tomatoes, dice the cucumber, chop the red onion, slice the olives, and chop the fresh mint and parsley. Having everything prepped and ready makes the assembly quick.
  4. Make the dressing: In a small bowl, whisk together the ¼ cup olive oil, lemon juice, red wine vinegar, Dijon mustard, and minced garlic. Season with salt and pepper. Taste it before you add it to the salad — it should be tangy and bright. If it needs more acid, squeeze in a little extra lemon.
  5. Assemble the salad: In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and mint. Pour the dressing over and toss everything together to coat evenly.

Tips for Success

  • Cool the quinoa completely before assembling: I cannot stress this enough. The first time I made this I was in a hurry and mixed everything while the quinoa was still warm. The feta melted into the grains and the cucumber went limp within minutes. Now I always spread the quinoa on a flat surface or pop it in the fridge for 10 minutes. It makes the whole salad taste more like itself.

  • Rinse the quinoa before cooking: Quinoa has a natural coating called saponin that can make it taste slightly bitter if you skip this step. Just run it under cold water in a fine mesh strainer for 30 seconds. It's a small step but it genuinely changes the flavor — I noticed the difference the one time I forgot.

  • Dress the salad right before eating, not hours ahead: If you're meal prepping, keep the dressing in a separate container and pour it on just before you eat. This is especially important for the quinoa — it absorbs liquid quickly and can go from fluffy to dense if it sits dressed for too long. The undressed salad keeps perfectly in the fridge for up to 3 days.

  • Don't skip the resting time on the chicken: I know it's tempting to slice immediately when you're hungry. But chicken that hasn't rested will lose all its juices the moment you cut it, and you'll end up with dry slices sitting on top of your salad. Five minutes covered loosely with foil is all it takes — the chicken stays moist and the salad stays better for it.

  • Swap the grain: If you can't find quinoa or just don't have it, couscous works really well here. It cooks even faster (just pour boiling water over it and let it sit for 5 minutes), and the texture holds up with the dressing. Bulgur wheat is another good option if you want something slightly nuttier and chewier. This isn't authentic Mediterranean food — it's my interpretation — so I say use what works for you.

  • Add roasted vegetables: Toss some diced zucchini, red bell pepper, or cherry tomatoes with olive oil and roast at 425°F (220°C) for 20 minutes until slightly caramelized, then fold them into the salad. It adds more depth and makes the whole thing feel more like a proper dinner. I do this when I want to stretch the recipe further without buying extra chicken.

I serve this at room temperature or slightly chilled — both work well. If it's been in the fridge, I take it out about 10 minutes before eating so the olive oil in the dressing loosens back up. Garnish with a little extra crumbled feta and some fresh parsley right before serving if you want it to look nice. This salad is filling enough to stand on its own as a main dish, but if I'm serving it alongside something else, it goes well next to a bowl of potato and bacon soup on a cooler day — the warm and cold contrast is actually really nice.

Storage

Keep the undressed salad (quinoa, vegetables, feta) and the grilled chicken in separate airtight containers in the fridge for up to 3 days. Store the dressing in a small jar with a lid — it keeps for up to a week. Don't pre-dress the full batch if you're planning to eat it over multiple days; the quinoa absorbs the dressing and gets dense. I don't recommend freezing the assembled salad — the cucumber and tomatoes go watery after thawing and it's not worth it. The plain cooked quinoa freezes fine on its own if you want to prep it ahead in bulk.

Can I make this salad ahead of time?

Yes — this is actually one of my favorite things about it. Cook the quinoa, grill the chicken, and prep all the vegetables up to 2 days ahead. Store everything separately and keep the dressing in a jar. When you're ready to eat, toss it all together and dress it. The assembled salad (without dressing) also keeps in the fridge for up to 3 days, so you can assemble it the night before as long as you add the dressing right before serving.

Can I use a different grain instead of quinoa?

Absolutely. Couscous is the fastest swap — just pour boiling water over it in a bowl, cover for 5 minutes, and fluff with a fork. Bulgur wheat and farro also work well and give the salad a slightly nuttier flavor. I've even made a version with orzo pasta when that was all I had. The dressing and vegetables work with all of them, so use what you've got.

How do I keep the chicken from drying out on the grill?

Two things matter here: don't overcook it, and let it rest before slicing. Pull the chicken off the heat as soon as it hits 165°F (74°C) internally — a cheap instant-read thermometer from any kitchen store makes this foolproof. Then let it sit for at least 5 minutes before cutting into it. That resting time lets the juices redistribute through the meat instead of running out onto your cutting board.

Can I use store-bought dressing to save time?

You can, and I won't judge you for it. A good Greek or Italian dressing from the store works fine here. That said, the homemade version takes literally 2 minutes and the flavor is noticeably better — especially because of the Dijon mustard, which helps the oil and lemon actually emulsify instead of separating. If you're short on time, use store-bought. If you have 2 extra minutes, make the dressing from scratch.

What can I use instead of Kalamata olives if I can't find them?

Regular black olives from a can work fine — they're milder and less briny but still give you that savory element. Green olives are another option if that's what you have. If you genuinely don't like olives, just leave them out. The salad is still well-seasoned without them; you might want to add a small pinch of extra salt to compensate for the missing brininess.
