DIRECTIONS

  • Step No.1: Activate the yeast
    In a small bowl, combine the warm milk (110°F — warm but not hot to the touch), 1 tablespoon of the sugar, and the yeast. Stir briefly and let sit for 5–10 minutes until the mixture is foamy and fragrant — if it does not foam, the yeast is not active and you should start again with fresh yeast before proceeding.
  • Step No.2: Make the dough
    In a large mixing bowl, whisk together the flour, remaining sugar, cinnamon, nutmeg, cloves, and salt. Add the melted butter, egg, vanilla extract, and foamy yeast mixture. Stir until a rough, sticky dough forms, then turn out onto a lightly floured surface and knead vigorously for 8–10 minutes until the dough is smooth, elastic, and springs back when poked.
  • Step No.3: Add raisins and first rise
    Flatten the dough slightly and scatter the raisins over the surface. Fold and knead for a further 2–3 minutes until the raisins are evenly distributed throughout. Shape into a ball, place in a lightly greased bowl, cover with a clean kitchen towel, and leave in a warm place to rise for 1–1.5 hours until genuinely doubled in size.
  • Step No.4: Shape the buns

The next morning, remove from the refrigerator and allow to come to room temperature for 30 minutes, then proceed with shaping and the second rise. This cold retard method actually develops even more flavour in the dough than a same-day rise.

Why are my buns dense?

Dense buns are almost always caused by insufficient rising time — the dough must genuinely double in size during the first rise, and the shaped buns must visibly puff during the second rise. Other possible causes include yeast that was not properly activated, milk that was too hot and killed the yeast, or too much flour added during kneading making the dough too stiff to rise properly.

Can I use instant yeast instead of active dry yeast?

Yes — instant yeast can be added directly to the dry ingredients without the proofing step in warm milk. Simply mix it in with the flour and spices and add the warm milk directly to the bowl with the other wet ingredients. The rising times may be slightly shorter with instant yeast.
