My husband doesn't really love dips — except for this one. The first time I set this out at a little get-together we hosted, he circled back to it three times before dinner even started. I took that as a sign to write the recipe down properly.

What makes this work is the cream cheese. A lot of hot dip recipes skip it or treat it as optional, but it's actually what gives this dip its thick, scoopable texture. Without it, the Alfredo sauce and mozzarella can get runny and loose in the oven. The cream cheese holds everything together so when you pull it out after 25 minutes, it's bubbly and golden and actually clings to whatever you're dipping into it. I mix everything cold and bake it all at once — no stovetop step, no double boiler, nothing fussy.

I make this mostly for game nights or when we have people over on short notice. It goes into the oven when the guests arrive and comes out right when everyone's hungry enough to stop hovering.   • 2 cups cooked shredded chicken (rotisserie works great)
  • 1 package (8 oz) cream cheese, softened to room temperature
  • 1 cup Alfredo sauce (store-bought is fine — Rao's or Bertolli both work well)
  • 1 cup shredded mozzarella cheese (freshly shredded if possible)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ¼ teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley (optional, for garnish)
  • Crackers, sliced baguette, tortilla chips, or fresh veggies for serving

Directions

  1. Preheat the oven: Set your oven to 375°F (190°C) and lightly grease a small baking dish — an 8x8 or similar size works well. Greasing prevents the cheese from sticking hard to the edges and makes cleanup much easier.
  2. Mix the base: In a large bowl, combine the softened cream cheese, Alfredo sauce, mozzarella, Parmesan, garlic powder, black pepper, and Italian seasoning. Stir until everything is smooth and fully combined. If your cream cheese is properly softened, this comes together in about a minute.
  3. Add the chicken: Fold in the shredded chicken until it's evenly distributed throughout the mixture. I use two forks to pull apart any larger clumps before adding — smaller pieces blend in better and make the dip easier to scoop.
  4. Transfer to the baking dish: Spoon the mixture into your prepared dish and spread it out evenly. If you want extra mozzarella on top for a more golden finish, sprinkle a small handful over the surface now.
  5. Bake until bubbly: Bake for 20–25 minutes, until the dip is hot all the way through, the edges are bubbling, and the top has a little golden color. Don't pull it out early — that bubbling is how you know the center is fully heated.
  6. Garnish and serve: Remove from the oven and let it sit for 2–3 minutes before serving. Scatter chopped parsley over the top if you like, and set it out with your dippers. Serve while it's still warm.

Tips for Success

  • Let the cream cheese come to room temperature: I already said this in the intro but it's worth repeating because it really matters. Cold cream cheese will leave chunks in the dip that never fully melt, even after 25 minutes in the oven. Set it out 15–20 minutes before you start mixing. If you forgot, cut it into small cubes and microwave in 10-second bursts until it's just soft — not melted.

  • Shred your own cheese if you can: Pre-shredded bags are coated with anti-caking agents (usually potato starch or cellulose) that interfere with melting. The first time I made this dip I used the bagged kind and the texture was noticeably grainier. A block of mozzarella from the store and a box grater takes maybe three extra minutes and the result is worth it.

  • Use a store-bought Alfredo sauce you actually like eating: The flavor of the sauce carries through strongly in the finished dip. If you use a bland jarred sauce, the dip will taste bland too. I usually reach for Rao's because it has a cleaner, more buttery flavor. This isn't a recipe where you can hide a mediocre sauce — it's front and center.

  • If baking from refrigerated, add 5–8 minutes: When I prep this the night before and bake it cold from the fridge, I pull it out about 20 minutes before baking to take the chill off slightly, then add a few extra minutes in the oven. An ice-cold dip going straight into a hot oven can end up bubbling on the outside while staying cool in the center.

I don't recommend freezing this — dairy-heavy dips tend to separate and get grainy once thawed, and it's not worth the trouble when it comes together so quickly fresh.
