  • 350-400g Halloumi Cheese
  • 12 Cherry Tomatoes
  • 1 Sweet Bell Pepper

  • 3 tablespoon Rose Harissa Paste

  • 3 tablespoon Olive Oil
  • 1 tablespoon Cider Vinegar
  • 1 teaspoon Dried Mint
  • ½ teaspoon Sumac
  • ¼ teaspoon Salt

Instructions

  • Soak your bamboo skewers in water for 30 minutes before cooking to prevent burning (skip this step if using metal skewers).
  • Combine the rose harissa paste, honey, benefits of olive oil, cider vinegar, dried mint, sumac, and salt in a jar and shake well to make the glaze.

  5. For grilling, lay the wrapped spears crosswise on the grill slats over medium-low heat, keeping the temperature between 300°F–350°F to avoid flare-ups. Grill for 6 to 8 minutes, turning 2 to 3 times, until just tender.
  6. For oven roasting, place them on a parchment-lined baking sheet and roast for 8 to 12 minutes, depending on the thickness of the spears.
  7. Serve immediately, or enjoy at room temperature. Drizzle with aged balsamic vinegar for an extra delicious finishing touch.

  • 3 tablespoon Paprika

  1. Flip the tofu on its side and slice it into thirds. Press the tofu firmly to squeeze out as much water as possible — this is key for a firm, flavorful result.
  2. Mix all the seasonings together in a bowl, then generously rub the spice mixture onto all sides of each tofu piece.
  3. Place the tofu on a preheated grill and cook each side for 7 to 10 minutes without moving to get perfect grill marks.
  4. Brush BBQ sauce on each side of the tofu and grill for an additional 2 to 3 minutes until caramelized and sticky.
  5. Serve immediately with your favorite sides, or chop it up to add to salads and wraps!

6. Campfire Grilled Romaine Caesar

Take your Caesar salad to a whole new level by throwing the romaine on the grill! Lightly charred romaine hearts are topped with a rich homemade Caesar dressing, tangy pickled onions, crispy dark bread crumbs, and shaved Parmesan — a show-stopping salad that is as unique as it is delicious!

Ingredients:

  • 2 Romaine Hearts, halved lengthwise
  • 2 oz Parmesan Cheese, shaved
  • Pickled Onions: 1 small red onion, ¾ cup distilled white vinegar, 3 tablespoon granulated sugar, 1 teaspoon red pepper flakes, 5 whole allspice berries, 1 bay leaf, 3 whole cloves
  • Bread Crumbs: 2 slices dark bread (rye or pumpernickel), 2 tablespoon extra-virgin olive oil
  • Caesar Dressing: 1 egg yolk, 1 anchovy fillet, 1 health benefits of garlic clove, 3 tablespoon fresh lemon juice, ½ teaspoon kosher salt, ¾ cup avocado or light olive oil, 2 teaspoon Worcestershire sauce, ½ teaspoon black pepper

Instructions:

  1. Make the pickled onions by combining the onion, vinegar, sugar, pepper flakes, allspice, bay leaf, and cloves in a small saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves, then turn off the heat and let the onions cool for about 60 minutes.
  2. Make the breadcrumbs by brushing both sides of the bread with olive oil and broiling for about 1 minute per side until toasted. Tear into pieces, pulse in a food processor into large crumbs, then broil again for 1 to 2 minutes until dry and crispy.
  3. Make the Caesar dressing by combining the egg yolk, anchovy, garlic, 1 tablespoon of lemon juice, and salt in a narrow jar. Blend with an immersion blender, slowly pour in the oil while blending, then add the remaining lemon juice, Worcestershire sauce, and pepper and blend until fully emulsified.
  4. Preheat the grill to medium-low. Brush the cut sides of the romaine hearts with olive oil and place them face down on the grill. Cook undisturbed for 2 to 4 minutes until grill marks appear, then flip and cook for 2 minutes more.
  5. Transfer the grilled romaine to a serving platter and top with ½ cup of pickled onions, a generous drizzle of Caesar dressing, and a handful of breadcrumbs.
  6. Finish with a sprinkle of shaved Parmesan and serve immediately!

5. Grilled Peach and Burrata Toast

Ingredients:

  • Honey Mustard Chicken:
  • 2½ lbs Boneless Skinless chicken thighs
  • ½ cup Honey
  • ½ cup Whole Grain Mustard
  • 2 tablespoon Extra-Virgin Olive Oil
  • ¼ cup Fresh Lemon Juice
  • ¼ cup Fresh Cilantro, finely chopped
  • 1 Garlic Clove, grated
  • 1 tablespoon Yellow Curry Powder
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Crushed Red Pepper Flakes
  • Peach Salad:
  • 6 Persian Cucumbers, cut into 1½-inch pieces and smashed
  • 2 Peaches, pitted and thinly sliced
  • ½ cup Fresh Cilantro, chopped
  • ½ cup Fresh Mint Leaves, roughly chopped
  • ¼ cup Fresh Lemon Juice
  • ½ teaspoon Kosher Salt

Instructions:

  1. In a large bowl, whisk together the honey, mustard, olive oil, lemon juice, cilantro, garlic, curry powder, salt, pepper, and red pepper flakes until smooth. Set aside ¼ cup of the marinade, then add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes.
  2. Preheat the grill to medium-low. Remove the chicken from the marinade, letting any excess drip off, and place on the grill. Cook for about 4 minutes per side until the chicken begins to char.
  3. Brush the chicken with the remaining marinade from the bowl and continue cooking, turning occasionally, until the internal temperature reaches 165°F, about 10 minutes more.
  4. While the chicken cooks, make the peach salad by tossing the cucumbers, peaches, cilantro, and mint together with the lemon juice, reserved ¼ cup of honey mustard marinade, and salt. Let it marinate at room temperature for about 10 minutes.
  5. Arrange the grilled chicken on a large platter, top generously with the peach salad, and garnish with extra cilantro and mint leaves.

  • Salt & Pepper, to taste
  • 6 Deli Rolls
  • 2 tablespoon Mayonnaise (optional)

Instructions:

  1. Preheat the grill to 450°F or medium-high heat.
  2. Grill the sausages for about 5 minutes per side until the internal temperature reaches 165°F. Remove from the grill, cover with foil, and set aside to keep warm.
