EASY AND TIME-SAVING SCHOOL PREP RECIPES

17. Turkey and Cheese Roll-Ups

Turkey and cheese roll-ups

Thinly sliced deli turkey wrapped around cream cheese, cucumber, and crisp lettuce — then rolled tightly and sliced into neat pinwheels. A fresh, protein-packed no-bread lunch option that travels beautifully. Pair with grapes or apple slices for a perfectly balanced meal.

Ingredients:

  • 8 large slices deli turkey
  • 4 oz cream cheese, softened
  • 1 tablespoon fresh dill or chives (optional)
  • ½ large cucumber, sliced into thin strips
  • 4 crisp lettuce leaves
  • Salt and pepper, to taste
  • Grapes or apple slices, for serving

Instructions:

  1. Mix the softened cream cheese with dill or chives, salt, and pepper until smooth.
  2. Lay each turkey slice flat. Spread a thin layer of cream cheese over the surface. Place a strip of cucumber and a piece of lettuce at one end.
  3. Roll the turkey tightly around the fillings. Secure with a toothpick if packing, or slice into rounds for pinwheels.
  4. Refrigerate until ready to pack. Keeps for up to 3 days. Pack alongside grapes or apple slices for a balanced lunch.

16. DIY Bento Box with Crackers and Cheese

Bento box with crackers cheese and fruit

A fun, no-cook snack-style lunchbox that kids absolutely love building themselves — crackers, cheese cubes, grapes, and carrot sticks all tucked into a compartment box. Takes 5 minutes to assemble and feels like a treat while being genuinely nutritious and satisfying.

Ingredients:

  • 1 handful of favourite crackers (Ritz, Triscuits, or whole grain)
  • 4–5 cubes or slices of cheddar or mild cheese
  • ½ cup grapes
  • 1 handful baby carrots
  • Optional extras: sliced turkey, apple slices, a small chocolate treat, or cherry tomatoes

Instructions:

  1. Use a compartment bento box or lunchbox with dividers to keep everything separated and fresh.
  2. Fill one section with crackers, one with cheese, one with grapes, and one with carrots.
  3. Add any optional extras in the remaining sections. Seal tightly.
  4. Pack with an ice pack to keep the cheese fresh. The whole box takes under 5 minutes to put together — perfect for busy mornings.

15. Peanut Butter and Banana Sushi

Peanut butter banana sushi rolls

A fun, no-cook lunch or snack that kids find irresistible — peanut butter spread on a flour tortilla, a whole banana placed at the edge and rolled up tightly, then sliced into bite-sized sushi-style rounds. No cooking, minimal prep, and completely delightful.

Ingredients:

  • 1 large flour tortilla
  • 2 tablespoons creamy peanut butter (or sunflower seed butter for nut-free)
  • 1 ripe banana
  • Optional extras: a drizzle of honey, mini chocolate chips, or granola sprinkled before rolling

Instructions:

  1. Lay the tortilla flat on a clean surface. Spread the peanut butter evenly over the entire surface, going all the way to the edges.
  2. Place the whole peeled banana at one edge of the tortilla. Add any optional extras at this stage.
  3. Roll the tortilla tightly around the banana, pressing firmly as you roll so it stays together.
  4. Slice into rounds approximately 1 inch thick — they will look just like sushi pieces. Serve immediately or pack in a sealed container for up to 4 hours.

14. Veggie and Hummus Cups

Small cups with hummus and veggie sticks

The easiest, healthiest, most portable snack around — individual cups filled with creamy hummus surrounded by carrot, cucumber, and bell pepper sticks ready for dipping. Prep a week's worth in one go and have a healthy snack or lunch add-on ready every single day.

Ingredients:

  • ½ cup hummus per person (store-bought or homemade)
  • 2 large carrots, peeled and cut into sticks
  • 1 large cucumber, cut into sticks or rounds
  • 1 red or yellow bell pepper, sliced into strips
  • Optional: celery sticks, snap peas, or broccoli florets
  • Small airtight cups or containers

Instructions:

  1. Spoon ½ cup of hummus into the bottom of each small cup or container.
  2. Stand the veggie sticks upright in the hummus around the edge of the cup — carrot, cucumber, and pepper sticks all tucked in together.
  3. Seal with a lid and refrigerate until ready to pack. The veggies keep crisp in the hummus for up to 2 days.
  4. Pack with an ice pack for school. Kids love pulling out the sticks and dipping straight from the cup.

13. Chicken Salad with Crackers

Chicken salad in container with crackers

A lightened-up chicken salad made with Greek yogurt instead of all mayo — shredded chicken, sweet grapes, crunchy celery, and fresh herbs in a creamy, tangy dressing. Pack with whole grain crackers for a satisfying, protein-rich lunch that keeps in the fridge all week.

Ingredients:

  • 2 cups cooked chicken breast, shredded
  • ¼ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 stalks celery, finely diced
  • ½ cup red grapes, halved
  • 1 tablespoon fresh dill or parsley, chopped
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • Whole grain crackers, for serving

Instructions:

  1. Combine the Greek yogurt, mayo, and Dijon mustard in a large bowl. Mix until smooth.
  2. Add the shredded chicken, celery, grapes, and fresh dill. Stir gently until everything is evenly coated. Season with salt and pepper.
  3. Taste and adjust seasoning. Refrigerate for at least 30 minutes before packing.
  4. Pack the chicken salad in a sealed container alongside a separate bag of whole grain crackers so they stay crispy. Keeps for up to 4 days in the fridge.

12. Overnight Oats (3 Ways)

Overnight oats jars with berries

The ultimate no-morning-effort breakfast — rolled oats, milk, yogurt, and chia seeds stirred together the night before and left to thicken into a creamy, ready-to-eat jar. Try maple cinnamon, mixed berry, or chocolate for three completely different and delicious variations.

Ingredients (base — serves 1):

  • ½ cup rolled oats
  • ½ cup milk of choice
  • ¼ cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1 tablespoon honey or maple syrup
  • Maple cinnamon: add ½ teaspoon cinnamon + extra maple syrup + sliced banana
  • Mixed berry: add ½ cup fresh or frozen berries + 1 teaspoon vanilla
  • Chocolate: add 1 tablespoon cocoa powder + 1 tablespoon chocolate chips + 1 teaspoon honey

Instructions:

  1. Combine the oats, milk, Greek yogurt, chia seeds, and honey in a mason jar or lidded container. Stir well to combine.
  2. Add any flavour variation ingredients and stir again. Taste and adjust sweetness.
  3. Seal the jar and refrigerate overnight — or for at least 6 hours — until thick and creamy.
  4. In the morning, give it a stir and add fresh toppings if desired. Eat cold straight from the jar or pack for an on-the-go breakfast. Keeps for up to 4 days in the fridge.

11. Hard Boiled Eggs (Protein Power)

Hard boiled eggs peeled in container

The simplest, most powerful protein-packed snack or lunch addition — batch-cook a dozen eggs on Sunday, peel and store in the fridge, and grab them throughout the week. Pair with fruit, a cheese stick, or crackers for a complete and satisfying no-prep snack.

Ingredients:

  • 6–12 large eggs
  • Salt and pepper, for serving
  • Optional seasonings: Everything bagel seasoning, smoked paprika, or hot sauce
  • Fruit, cheese sticks, or crackers, for pairing

Instructions:

  1. Place the eggs in a single layer in a saucepan. Cover with cold water by 1 inch. Bring to a boil over medium-high heat.
  2. Once boiling, cover the pot, remove from heat, and let stand for 10–12 minutes for fully cooked yolks.
  3. Transfer immediately to a bowl of ice water and let cool for 10 minutes. Peel under running water for easiest peeling.
  4. Store peeled eggs in an airtight container in the fridge for up to 5 days. Pack with a small sprinkle of everything bagel seasoning or smoked paprika alongside fruit or a cheese stick.

10. Pasta Salad with Veggies

Pasta salad with cherry tomatoes and olives

A colourful, make-ahead pasta salad with rotini, cherry tomatoes, cucumbers, olives, and Italian dressing that stays fresh and flavourful for up to 4 days in the fridge. The perfect prep-once-eat-all-week lunch that gets better as the flavours marinate together overnight.

Ingredients:

  • 10 oz rotini pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • ½ cup black or kalamata olives, sliced
  • ¼ red onion, finely diced
  • ½ cup Italian dressing
  • ½ cup mozzarella pearls or cubed feta (optional)
  • Fresh basil, salt, and pepper, to taste

Instructions:

  1. Cook the rotini until al dente. Drain, rinse with cold water, and cool completely.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, olives, and red onion.
  3. Pour the Italian dressing over and toss well. Add cheese if using. Season with salt, pepper, and fresh basil.
  4. Refrigerate for at least 1 hour. Portion into individual containers for up to 4 days. Toss before serving and add a little extra dressing if it has dried out.

9. Mini Whole Wheat Pizzas

Mini whole wheat pizzas in container

Homemade English muffin pizzas on whole wheat bases with pizza sauce, melted mozzarella, and your favourite toppings — baked on Sunday and packed throughout the week. They taste delicious cold straight from the lunchbox and can be reheated in a microwave in 30 seconds.

Ingredients:

  • 4 whole wheat English muffins, split in half (8 halves)
  • ½ cup pizza or marinara sauce
  • 1½ cups shredded mozzarella
  • Toppings of choice: mini pepperoni, sliced olives, diced bell pepper, or mushrooms
  • Italian seasoning, for sprinkling

Instructions:

  1. Preheat oven to 375°F. Arrange the English muffin halves cut-side up on a baking sheet.
  2. Spread a tablespoon of sauce on each half. Top with mozzarella and your chosen toppings. Sprinkle with Italian seasoning.
  3. Bake for 10–12 minutes until the cheese is melted and bubbling. Let cool completely before packing.
  4. Store in an airtight container in the fridge for up to 4 days. Pack cold or reheat in a microwave for 30 seconds before eating.

8. Smoothie Freezer Packs

Freezer bags with smoothie ingredients

The ultimate morning time-saver — all your smoothie ingredients pre-portioned into zip-lock bags and frozen on Sunday, so all you need to do each morning is empty one bag into the blender, add milk or yogurt, and blend. A nutritious, colourful breakfast in under 2 minutes.

Ingredients (per pack):

  • 1 cup baby spinach
  • 1 medium banana, sliced and frozen
  • ½ cup frozen mixed berries
  • ½ cup frozen mango chunks
  • Optional add-ins: 1 tablespoon chia seeds, 1 tablespoon peanut butter, or 1 tablespoon daily protein needs powder
  • To blend: 1 cup milk of choice or yogurt added fresh each morning

Instructions:

  1. Lay out 5–7 zip-lock freezer bags — one for each day of the week.
  2. Divide the spinach, banana slices, mixed berries, and mango evenly among the bags. Add any optional extras.
  3. Seal and freeze flat. Bags keep frozen for up to 3 months.
  4. Each morning, dump one frozen bag into the blender, add 1 cup of milk or yogurt, and blend until completely smooth. Pour into a glass or travel cup and enjoy immediately.

7. Greek Yogurt Parfaits

Greek yogurt parfait jars with granola

A beautiful, protein-rich breakfast or snack layered in a jar — creamy Greek yogurt, sweet fresh berries, and crunchy granola. The key to keeping them fresh and meal-prepped all week is storing the granola separately and adding it only when you are ready to eat so it stays perfectly crunchy.

Ingredients (per jar):

  • ¾ cup plain or vanilla Greek yogurt
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract (for plain yogurt)
  • ½ cup mixed fresh berries (strawberries, blueberries, raspberries)
  • ¼ cup granola (stored separately until eating)
  • Small mason jars or airtight containers

Instructions:

  1. Stir honey and vanilla into the Greek yogurt until combined.
  2. Layer half the yogurt in the bottom of a jar. Add a layer of berries. Add the remaining yogurt. Top with more berries.
  3. Seal the jar. Pack the granola in a small separate zip-lock bag or container so it stays crunchy.
  4. Refrigerate for up to 4 days. Add the granola and stir just before eating. Makes a brilliant make-ahead breakfast or mid-morning snack.

6. Quesadilla Slices

Quesadilla slices in lunchbox

Golden, crispy cheese and bean quesadillas cut into triangles and packed with small cups of salsa or guacamole — a fun, satisfying lunch that tastes great cold straight from the lunchbox. Make a batch on Sunday and refrigerate for easy weekday packing all week long.

Ingredients:

  • 4 large flour tortillas
  • 1½ cups shredded cheddar or Monterey Jack cheese
  • ½ cup canned black beans, drained and rinsed (optional)
  • ¼ cup corn kernels (optional)
  • Cooking spray or butter
  • Salsa and guacamole, for dipping

Instructions:

  1. Heat a large skillet over medium heat and spray with cooking spray. Place one tortilla in the skillet.
  2. Scatter cheese, black beans, and corn evenly over one half of the tortilla. Fold the other half over to enclose the filling.
  3. Cook for 2–3 minutes per side until the tortilla is golden and crispy and the cheese is fully melted.
  4. Let cool for 5 minutes then slice into 3–4 triangles. Pack in a sealed container with small cups of salsa and guacamole. Keeps for up to 3 days in the fridge.

5. Zucchini Muffins (Veggie-Packed)

Zucchini muffins on cooling rack

Moist, lightly sweet muffins packed with hidden shredded zucchini — kids never even know the vegetables are there. A brilliant way to sneak extra nutrition into breakfast or a snack. Bake a batch, freeze them, and grab one whenever you need a quick healthy option.

Ingredients:

  • 1½ cups all-purpose flour (or half whole wheat)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup sugar or honey
  • ⅓ cup benefits of olive oil or melted butter
  • 1 teaspoon vanilla extract
  • 1½ cups shredded zucchini, squeezed very dry
  • Optional mix-ins: ½ cup chocolate chips, raisins, or chopped walnuts

Instructions:

  1. Preheat oven to 350°F. Line a 12-cup muffin tin with liners. Grate the zucchini and squeeze out all excess moisture using a clean towel.
  2. Whisk together the flour, baking soda, cinnamon, and salt. In a separate bowl, whisk the eggs, sugar, oil, and vanilla until combined.
  3. Stir the wet ingredients into the dry until just combined — do not overmix. Fold in the squeezed zucchini and any optional mix-ins.
  4. Divide among muffin cups and bake for 18–22 minutes until a toothpick comes out clean. Cool completely. Store at room temperature for 3 days, fridge for 1 week, or freeze for up to 3 months.

4. Tuna Salad Lettuce Wraps

Tuna salad in lettuce wraps

A light, low-carb lunch option — creamy tuna salad made with mayo and sweet relish scooped into crisp butter lettuce leaves instead of bread. Fresh, satisfying, and beautifully portable. Pack the tuna salad separately and wrap on-site to keep the lettuce perfectly crisp.

Ingredients:

  • 2 (5 oz) cans tuna in water, drained
  • 3 tablespoons mayonnaise
  • 1 tablespoon sweet relish
  • 2 stalks celery, finely diced
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 8 butter lettuce leaves, washed and dried
  • Sliced cucumber and tomato, for adding inside (optional)

Instructions:

  1. Drain the tuna well and flake into a bowl. Add the mayo, sweet relish, celery, and lemon juice. Mix until combined. Season with salt and pepper.
  2. Taste and adjust seasoning. Refrigerate until ready to pack — keeps for up to 3 days.
  3. Pack the tuna salad in a sealed container. Pack the lettuce leaves separately wrapped in a damp paper towel to stay crisp.
  4. At lunchtime, spoon a generous portion of tuna salad into each lettuce leaf, add optional cucumber and tomato, and eat like a taco.

3. No-Bake Energy Bites

No bake energy bites in a bowl

The best after-school and on-the-go snack — rolled oats, creamy peanut butter, honey, and mini chocolate chips mixed together and rolled into satisfying little bites of energy. No baking, no fuss, and ready in 15 minutes. Make a big batch and they disappear within days.

Ingredients:

  • 1½ cups rolled oats
  • ½ cup creamy peanut butter (or sunflower seed butter)
  • ⅓ cup honey or maple syrup
  • ½ cup mini chocolate chips
  • 2 tablespoons chia seeds or flaxseed (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Combine all ingredients in a large bowl. Stir well until everything is evenly mixed and the mixture holds together when pressed.
  2. Refrigerate the mixture for 20–30 minutes to firm up — this makes rolling much easier.
  3. Scoop heaped tablespoons and roll firmly between your palms into balls. Place on a parchment-lined tray.
  4. Refrigerate for at least 30 minutes until firm. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months. Makes approximately 20 bites.

2. DIY Lunchable (Ham and Cheese)

DIY lunchable with ham cheese and crackers

A homemade version of the beloved childhood classic that is far better than anything from a box — thin slices of good deli ham, squares of real cheese, your favourite crackers, and a few dark chocolate chips for a sweet finish. Simple, fun, satisfying, and completely customisable.

Ingredients:

  • 6–8 slices deli ham, folded or rolled
  • 4–6 squares or slices of sharp cheddar or Swiss cheese
  • 1 handful of favourite crackers (Ritz, Club, or whole grain)
  • 1 tablespoon dark chocolate chips or a small chocolate square
  • Optional additions: grapes, cherry tomatoes, olives, or mustard in a small dipping cup

Instructions:

  1. Use a compartment lunchbox or bento box with at least 4 sections.
  2. Arrange the ham slices in one compartment, cheese in another, and crackers in a third. Place the chocolate chips in the last compartment.
  3. Add any optional extras to remaining compartments — grapes, tomatoes, or a small mustard dipping cup work wonderfully.
  4. Seal tightly and pack with an ice pack to keep the ham and cheese fresh. Takes under 5 minutes to assemble. Keeps for up to 3 days in the fridge.

1. Freezer Breakfast Burritos

Breakfast burritos wrapped in foil

The ultimate meal prep breakfast — scrambled eggs, sausage, cheese, and potatoes wrapped in a warm flour tortilla, assembled in bulk, and frozen individually so breakfast is ready in 90 seconds any morning of the week. Make a batch of 10–12 on the weekend and never skip breakfast again.

Ingredients (makes 8 burritos):

  • 8 large flour tortillas
  • 8 large eggs, scrambled
  • 8 oz breakfast sausage, cooked and crumbled
  • 1 cup frozen hash browns or diced potatoes, cooked until crispy
  • 1½ cups shredded cheddar cheese
  • Salt, pepper, and hot sauce, to taste
  • Optional add-ins: black beans, diced bell pepper, jalapeño, or salsa

Instructions:

  1. Cook the sausage, potatoes, and scrambled eggs separately. Let all components cool to room temperature before assembling — hot fillings make the tortillas soggy.
  2. Warm the tortillas briefly in a dry skillet or microwave to make them pliable. Lay flat on a clean surface.
  3. Divide the eggs, sausage, potatoes, and cheese evenly among the 8 tortillas. Add optional extras. Season with salt, pepper, and hot sauce.
  4. Fold in the sides and roll up tightly like a burrito. Wrap each one tightly in foil or plastic wrap. Freeze in a zip-lock bag for up to 3 months. To reheat: remove foil, wrap in a damp paper towel, and microwave for 90 seconds, flipping once.

FAQs

Which of these recipes are best for meal prepping the entire week on Sunday?

The freezer breakfast burritos, smoothie freezer packs, overnight oats, hard-boiled eggs, pasta salad, energy bites, and zucchini muffins are all excellent candidates for a Sunday prep session. Batch-cook on Sunday and your mornings and lunches will be covered from Monday through Friday with zero daily effort. The burritos and muffins freeze for up to 3 months, so you can double the batch and have options ready for months.

How do I keep lunch containers fresh and avoid soggy food?

The key is keeping wet and dry elements separated until eating time. Pack crackers and granola in separate small bags rather than mixing them in with the mains. For lettuce wraps, pack the tuna salad and lettuce separately. For pasta salad and quesadillas, an ice pack is essential to keep them at a safe temperature and maintain texture. Build bento boxes with compartments rather than combining everything in one container — this keeps every element crisp, fresh, and exactly how it should be.

Which options are nut-free for school lunchboxes?

The turkey and cheese roll-ups, DIY bento box, veggie and hummus cups, chicken salad with crackers, overnight oats (check granola ingredients), hard-boiled eggs, pasta salad, mini whole wheat pizzas, Greek yogurt parfaits, quesadilla slices, tuna lettuce wraps, DIY lunchable, and freezer breakfast burritos are all completely nut-free. For the peanut butter banana sushi and energy bites, simply substitute sunflower seed butter for a delicious nut-free alternative that tastes almost identical.

How long do these meal prep items keep in the fridge?

As a general guide: pasta salad and chicken salad keep for 4 days, overnight oats for 4 days, Greek yogurt parfaits (without granola) for 4 days, energy bites for 2 weeks, hard-boiled eggs for 5 days, quesadilla slices for 3 days, turkey roll-ups for 3 days, tuna salad for 3 days, and zucchini muffins for 1 week. Freezer breakfast burritos and smoothie packs keep frozen for up to 3 months. Always pack with an ice pack for items containing eggs, meat, or dairy.

What are the highest-protein options on this list?

The freezer breakfast burritos (eggs, cheese, sausage), hard-boiled eggs, chicken salad with crackers, tuna lettuce wraps, Greek yogurt parfaits, overnight oats with Greek yogurt, and turkey and cheese roll-ups are all high-protein options that will keep hunger at bay for hours. Pairing any of these with a cheese stick, energy bites, or the DIY lunchable adds even more protein for a genuinely satisfying and nutritionally complete meal.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.
