If you love pickles and bold flavours, this Creamy Dill Pickle Soup is about to become your new favourite. It's tangy, creamy, and savoury—everything you want in a cosy bowl of soup.

The sourness of pickles and brine adds a delicious twist to this hearty and comforting dish. It’s an Eastern European classic with a modern creamy twist. The texture is velvety, but you still get a hearty bite.

This soup combines soft potatoes, onions, and carrots simmered in a creamy broth that's infused with dill pickle juice. The chopped pickles are stirred in at the end to give bursts of salty, tangy goodness with each spoonful.

Don’t be fooled by the name—it’s not overly sour. The cream balances out the tartness, giving it a rich and mellow flavour. It’s perfect for cold days, unusual cravings, or impressing guests with something different but truly satisfying.

Creamy Dill Pickle Soup is an easy one-pot recipe that takes under an hour to prepare. Let’s dive into how to make this mouth-watering, creamy, tangy soup that’s always a conversation starter at the dinner table.

WHY YOU WILL LOVE THIS RECIPE

  • Comfort in a Bowl: It's creamy, warm, and filling—perfect for chilly nights or when you're feeling under the weather.

  • One-Pot Wonder: This soup comes together easily in one pot, making clean-up quick and painless.

  • Great for Leftovers: It tastes even better the next day, once all the flavours have had time to meld.

  • Budget-Friendly Meal: Uses basic, inexpensive ingredients like potatoes, carrots, broth, and pickles.

  • Perfectly Balanced: The cream mellows the acidity, giving you a soup that’s both rich and tangy.

INGREDIENTS

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 large carrots, sliced
  • 3 medium potatoes, peeled and cubed
  • 4 cups vegetable or chicken broth
  • 1 cup dill pickle juice
  • 1 cup chopped dill pickles
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried dill or 2 tablespoons fresh dill
  • Salt and black pepper, to taste

DIRECTIONS

  • Step No.1: Sauté the vegetables
In a large pot, melt butter over medium heat. Add onion and carrots and sauté for about 5 minutes until softened.

  • Step No.2: Add garlic and potatoes
Stir in minced garlic and cubed potatoes. Cook for 2–3 minutes, stirring occasionally to prevent sticking.

  • Step No.3: Pour in broth and pickle juice
Add broth and dill pickle juice. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are tender.

  • Step No.4: Add chopped pickles and dill
Stir in chopped dill pickles and dill. Continue simmering for another 5 minutes to blend the flavours.

  • Step No.5: Prepare the cream mixture
In a separate bowl, whisk together heavy cream and flour until smooth. Slowly add to the soup, stirring constantly to avoid lumps.

  • Step No.6: Simmer and season
Simmer the soup for another 5–7 minutes until it thickens. Add salt and pepper to taste and adjust seasoning as needed.

  • Step No.7: Serve and enjoy
Ladle into bowls and garnish with extra dill or sliced pickles if desired. Serve warm with crusty bread.

TIPS FOR SUCCESS

  • Use Starchy Potatoes: Yukon gold or russet potatoes give the soup a creamy texture without becoming mushy.

  • Whisk the Cream Smoothly: Blend the flour and cream well to avoid clumps in the soup.

  • Simmer Gently: Avoid boiling after cream is added to prevent curdling.

  • Adjust the Tanginess: Start with less pickle juice, then add more to taste.

  • Fresh Dill for Brightness: If available, fresh dill adds a burst of fresh herbal flavour.

  • Cut Pickles Evenly: Chopping pickles into even pieces ensures balanced flavour in every bite.

  • Reheat Slowly: When reheating leftovers, do so gently over low heat to preserve the creamy texture.

VARIATIONS

  • vegan diet Version: Use plant-based butter, vegetable broth, and dairy-free cream to make it completely vegan.

  • Add daily protein needs: Stir in shredded chicken or white beans for extra protein and heartiness.

  • Spicy Twist: Add a pinch of crushed red pepper or diced jalapeño for a spicy variation.

  • Chunky or Blended: Leave it chunky or blend half the soup for a creamy yet textured result.

  • More Veggies: Add celery or corn for more flavour and texture.

  • Cheesy Option: Stir in some shredded cheddar for a richer, cheesier twist.

  • Pickle Garnish: Top each bowl with a pickle chip or slice for extra visual appeal.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
