This Creamy Dill Pickle Soup is a tangy, comforting twist on a classic creamy soup. Loaded with potatoes, veggies, and plenty of pickles, it’s a unique and flavorful dish that’s perfect for pickle lovers!
In a large pot, melt butter over medium heat. Add diced onion and sauté until translucent, about 3–4 minutes. Add garlic and cook for another minute until fragrant.
Cook Potatoes:
Pour in broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 10–12 minutes, or until potatoes are tender.
Add Pickles & Pickle Juice:
Stir in diced pickles and pickle juice. Continue simmering for another 5 minutes.
Make Cream Mixture:
In a separate bowl, whisk together sour cream and flour until smooth. Slowly add a ladle of hot soup to the mixture to temper, then pour it back into the pot, stirring constantly to avoid curdling.
