My husband doesn't really love breakfast food — except for this one. The first time I made this tater tot sausage breakfast casserole on a Saturday morning, he had two servings and then asked if there was more. That doesn't happen often, so I wrote the recipe down immediately.

What makes this work is the layering. Half the tater tots go on the bottom, then the sausage and onion, then the rest of the tots on top — so you get crispy bits on both the bottom and the surface.   2. Cook the sausage and onion: In a large skillet over medium heat, cook the breakfast sausage, breaking it up as it browns. Add the chopped onion and cook together until the onion is soft, about 5-7 minutes total. Drain any excess grease — this step matters, because a greasy casserole will be heavy and the egg won't set cleanly.
  3. Layer the first half of tater tots: Spread half the tater tots in an even single layer across the bottom of your baking dish. They don't need to be perfect, just roughly even so the egg distributes evenly later.
  4. Add the first cheese layer: Sprinkle half of both cheeses over the tater tots — don't skip this middle cheese layer, it's what gives the inside of the casserole that melty, cohesive texture.
  5. Add the sausage mixture: Spread the cooked sausage and onion evenly over the cheese. Try to get it across the whole dish so every square has sausage in it.
  6. Top with remaining tater tots: Lay the rest of the tater tots over the sausage layer. These are the ones that will crisp up on top during baking, so try to arrange them in a fairly even layer.
  7. Make the egg mixture: In a large bowl, whisk together the eggs, milk, dry mustard, salt, and pepper until smooth. Pour this evenly over the entire casserole, letting it seep down between the tots. It will look like a lot of liquid — that's fine, it'll set.
  8. Add the remaining cheese on top: Scatter the rest of the cheddar and Monterey Jack over everything. This is the layer that gets golden and slightly crispy on top.
  9. Bake: Bake uncovered for 45-55 minutes. You're looking for the top tots to be golden brown and the egg mixture to be fully set in the center — not jiggly. Let it rest for 5-10 minutes before cutting so the squares hold together cleanly.
  10. Garnish and serve: Scatter chopped green onions over the top if you're using them. Cut into squares and serve warm.

Tips for Success

  • Thaw the tater tots slightly before assembling: I take them out of the freezer about 20-30 minutes before I start. Fully frozen tots in the center of the casserole don't cook evenly — the outside of the dish sets before the middle tots have fully cooked through. I learned this after my first attempt came out with some oddly dense, starchy spots in the middle. A partial thaw fixes it.

  • Drain the sausage grease — really: I know it seems like a small thing but if you skip draining, the grease pools under the egg mixture and the whole bottom layer becomes oily and heavy. I tip the skillet and spoon out the grease, or use a paper towel to blot. It makes a noticeable difference in texture.

  • Don't cover it while baking: Baking uncovered is what lets the top tots go golden and the cheese get some color. I made the mistake of covering it with foil once because I was worried about it drying out — ended up with pale, steamed tots on top and a watery casserole. Leave it uncovered the entire time.

  • If baking from cold (overnight prep), add 10 minutes: A cold casserole straight from the fridge takes longer to heat through. I give it an extra 10 minutes and check the center at 55 minutes by pressing gently — it should feel firm, not wobbly. Pull it before the cheese gets too dark.

  • Let it rest before cutting: This isn't just for looks. The egg needs 5-10 minutes to finish setting after it comes out of the oven, otherwise your squares fall apart and you end up with a pile of scrambled egg and tots instead of clean slices. I use this time to pour coffee and get plates out.

How do I keep the tater tots from getting soggy?

Thaw overnight in the fridge, then reheat covered in foil at 350°F for about 20 minutes, uncovering for the last 5-10 minutes to crisp the top. The texture won't be identical to fresh but it's still genuinely good — I've done this after big holidays when we have half a casserole left over.

What can I substitute if I don't have dry mustard?

You can skip it and the casserole will still taste good — I've done it when I ran out and it was fine. If you want to keep the depth it adds, a small squirt of prepared yellow mustard (about ½ teaspoon) mixed into the egg works as a substitute. Some people use a pinch of smoked paprika instead for a different but similarly savory note.
