  • 2 teaspoon smoked paprika
  • 2 teaspoon dried thyme

Ingredients

  • For the Chicken Marinade:
  • 2 lbs bone-in skin-on chicken thighs and drumsticks
  • 1 cup full-fat plain yogurt
  • 2 tablespoon ginger-garlic paste
  • 2 tablespoon garam masala
  • 2 teaspoon ground turmeric
  • 2 teaspoon Kashmiri red chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon salt
  • 2 tablespoon lemon juice
  • For the Rice:
  • 3 cups basmati rice, rinsed and soaked 30 minutes
  • 10 cups water
  • 2 bay leaves
  • 4 cardamom pods
  • 1 cinnamon stick
  • 4 whole cloves
  • 2 tablespoon salt
  • For Layering:
  • 4 medium potatoes, peeled and quartered
  • 2 large onions, thinly sliced
  • ½ cup neutral oil
  • 1 teaspoon saffron threads steeped in ¼ cup warm milk
  • 4 tablespoon ghee, melted
  • ½ cup fresh cilantro, chopped
  • ½ cup fresh mint, chopped

Instructions

  1. Marinate chicken in yogurt, ginger-garlic paste, garam masala, turmeric, Kashmiri chili, cumin, coriander, salt, and lemon juice. Refrigerate at least 2 hours, ideally overnight.
  2. Heat oil in a large heavy-bottomed pot. Fry sliced onions over medium heat 15-20 minutes until deeply golden brown and crispy (this is birista). Reserve half for garnish; leave half in the pot.
  3. Fry quartered potatoes in the same oil until golden on all sides, about 6-8 minutes. Remove and set aside.
  4. In the same pot, add marinated chicken (with all the marinade). Cook covered 20-25 minutes until chicken is nearly cooked through and oil separates.
  5. Boil water with bay leaves, cardamom, cinnamon, cloves, and salt. Add soaked rice. Cook only until rice is 70% done (about 6-7 minutes). Drain.
  6. Layer in pot: bottom = chicken with sauce + fried potatoes. Middle = half the rice. Sprinkle with half the fried onions, half the cilantro, half the mint.
  7. Top with remaining rice. Drizzle saffron milk and melted ghee over the top. Scatter remaining fried onions, cilantro, and mint.
  8. Cover with a tight-fitting lid (seal with foil if necessary). Cook on the lowest heat for 25-30 minutes (this is dum cooking).
  9. Turn off heat and let rest 10 minutes. Gently lift portions from the pot, keeping rice layers intact. Serve with cucumber raita and tomato chutney.
