Ingredients (serves 4):
- 4 salmon fillets (about 6 oz each), skin-on
- Vegetables: 1 lb asparagus (woody ends snapped off) + 4 cups broccoli florets + 2 cups cherry tomatoes + 1 large bell pepper (sliced) + 1 medium red onion (sliced) + 1 small zucchini (sliced)
- Garlic-lemon-herb seasoning: ⅓ cup olive oil + 8 cloves garlic, minced + zest of 2 lemons + juice of 2 lemons + 2 tablespoons Dijon mustard + 1 tablespoon honey + 2 tablespoons fresh thyme + 2 tablespoons fresh parsley + 2 tablespoons fresh dill + 2 tablespoons Italian seasoning + 1.5 teaspoons salt + 1 teaspoon black pepper + 1 teaspoon paprika + 1 teaspoon garlic powder + ½ teaspoon red pepper flakes
- Lemon-dill butter (for finishing): 4 tablespoons butter, melted + 4 cloves minced garlic + 2 tablespoons fresh lemon juice + 2 tablespoons fresh dill
- ⅓ cup grated Parmesan (optional, for topping vegetables)
- Fresh dill, lemon wedges, fresh parsley for serving
- Flaky sea salt for finishing
Instructions:
- Preheat oven to 425°F. Whisk all garlic-lemon-herb seasoning ingredients. Reserve ⅓ cup for the salmon; use the rest for the vegetables.
- Toss broccoli, bell pepper, red onion, and zucchini with the larger portion of seasoning. Spread on a large parchment-lined sheet pan. Roast for 12 minutes.
- Pat salmon fillets extremely dry. Brush generously with the reserved seasoning. Push the partially roasted vegetables aside and add salmon to the sheet pan, skin-side down. Add asparagus and cherry tomatoes around the salmon. Sprinkle Parmesan over vegetables if using.
- Return to oven and roast for 12–14 minutes more until salmon reaches 125–130°F internal and vegetables are tender and caramelised. Whisk lemon-dill butter ingredients and drizzle over everything. Top with fresh dill, parsley, and flaky sea salt. Serve with lemon wedges directly from the sheet pan.
