  • Cashew cream: 1 cup raw cashews soaked in hot water for 30 minutes + 1 cup vegetable broth + 3 tablespoons nutritional yeast + 2 tablespoons fresh lemon juice + 2 cloves garlic — blended completely smooth
  • 3 cups chopped kale or baby spinach
  • Juice of 1 lemon (added at the end)
  • ⅓ cup chopped fresh parsley
  • Crusty bread for serving

Instructions:

  1. Soak cashews in hot water for 30 minutes. Drain and blend with all cashew cream ingredients until completely smooth.
  2. Heat olive oil in a large pot. Sauté onion, celery, and carrots for 8 minutes. Add sliced mushrooms and cook 6 minutes until liquid evaporates and mushrooms are golden. Add garlic and tomato paste, cook 2 minutes.
  3. Stir in vegetable broth, soy sauce, rinsed wild rice, Italian seasoning, fresh thyme, bay leaves, salt, pepper, and red pepper flakes. Bring to a simmer. Cover partially and cook for 45 minutes until wild rice is tender.
  4. Remove bay leaves. Stir in cashew cream and kale. Cook 3 minutes. Stir in lemon juice. Top with fresh parsley. Serve with crusty bread.

  • 1 lb pasta (penne, rigatoni, or fusilli)
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 2 bell peppers (red and yellow), diced
  • 2 medium zucchini, cubed
  • 8 oz mushrooms, sliced
  • 8 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 1 jar (24 oz) marinara sauce
  • 1 can (14 oz) crushed tomatoes
  • 3.5 cups vegetable broth
  • 1 cup frozen peas (added at the end)
  • 2 tablespoons Italian seasoning, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon salt, ½ teaspoon black pepper, ½ teaspoon red pepper flakes
  • 1 cup grated Parmesan
  • ⅓ cup chopped fresh basil + ⅓ cup chopped fresh parsley
  • Fresh basil, extra Parmesan, red pepper flakes for serving

Instructions:

  1. Set Instant Pot to SAUTÉ. Heat olive oil. Sauté diced onion for 5 minutes. Add bell peppers, zucchini, and mushrooms, cook 5 minutes. Add garlic, tomato paste, Italian seasoning, oregano, basil, salt, pepper, and red pepper flakes. Cook 2 minutes.
  2. Add pasta on top of vegetables (don't stir). Pour marinara sauce, crushed tomatoes, and vegetable broth over the pasta. Press pasta down gently so it's mostly submerged.
  3. Close lid, set valve to SEALING. Cook on HIGH PRESSURE for 5 minutes (or half the package cooking time minus 1 minute). Quick release.
  4. Stir in frozen peas, Parmesan, fresh basil, and parsley. Let sit covered for 3 minutes. Top with extra fresh basil, Parmesan, and red pepper flakes. Serve immediately.
