The oven is a poor choice in summer. Heating a kitchen to 175°C for 45 minutes is counterproductive when the ambient temperature outside is already working against you, and the resulting dessert — however excellent — has to compete with the ambient temperature for everyone's attention. The no-bake dessert is the correct summer choice: assembled cold, served cold, and requiring nothing from the kitchen except the refrigerator and occasional use of the stovetop for melting chocolate.
My husband operates on a strict summer dessert principle: if it is cold and sweet, it belongs at the table. He does not distinguish much between a no-bake cheesecake and a properly made pâte feuilletée tart — the quality criteria in July is temperature. He eats enthusiastically when it is cold and picks at things when they are room temperature. This principle has shaped my summer dessert approach significantly.
