One-pot chicken dinners are the category that pays off most consistently on a weeknight. The chicken sears in one pan, the aromatics and liquid go in, the lid goes on, and the oven or stovetop does the rest. The rendered chicken fat bastes whatever liquid and vegetables are in the pan, the braising liquid concentrates into a sauce, and the result is deeply flavoured in a way that sheet-pan or grilled chicken simply cannot replicate.

The cuts that work best in one-pot preparations are bone-in thighs and drumsticks — the bone conducts heat differently, slows the cooking at the centre, and produces collagen-rich braising liquid that becomes a genuine sauce. Boneless breast works in one-pot preparations but requires shorter cooking times and is less forgiving. The collections that follow are built primarily around bone-in pieces.

My husband's favourite dinner in this entire batch-production sprint has been the harissa chicken with chickpeas — he has requested it four times over the past three months, which is unprecedented for a single recipe. The one-pot format means the chickpeas absorb the harissa-spiced chicken juices and become the best possible accompaniment.
