1. Air Fryer Chicken Fajitas

Sliced chicken breast and bell peppers tossed in homemade fajita seasoning — air-fried until the chicken is juicy and the vegetables are charred and tender. Served in warm tortillas with all your favourite toppings. This earns the top spot because air fryer chicken fajitas are the recipe I make most often when I want a complete Tex-Mex dinner ready in 25 minutes. Slice chicken and vegetables into similar-sized strips for even cooking. The homemade fajita seasoning is meaningfully more flavourful than store-bought packets because you control the salt and freshness.

Ingredients (makes 8 fajitas):

  • 2 lbs boneless chicken breast, sliced into ¼-inch strips
  • 3 bell peppers (red, yellow, orange), sliced into strips
  • 1 large red onion, sliced into strips
  • 1 cup frozen corn (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • Homemade fajita seasoning: 1 tablespoon chili powder + 1 tablespoon ground cumin + 1.5 teaspoons smoked paprika + 1.5 teaspoons garlic powder + 1 teaspoon onion powder + 1 teaspoon dried oregano + 1 teaspoon salt + ½ teaspoon black pepper + ½ teaspoon cayenne (optional) + 1 teaspoon brown sugar
  • 8 small flour or corn tortillas, warmed
  • Toppings: shredded Mexican cheese, fresh cilantro, sliced avocado, sour cream, salsa, sliced jalapeños, lime wedges

Instructions:

  1. Slice chicken and vegetables into uniform strips. Mix all fajita seasoning ingredients.
  2. In a large bowl, toss chicken strips with 2 tablespoons olive oil, lime juice, and ⅔ of the fajita seasoning. In a separate bowl, toss bell peppers, onion, and corn with remaining olive oil and seasoning.
  3. Preheat air fryer to 400°F. Add chicken to the basket first; air fry for 6 minutes. Add the seasoned vegetables on top of the chicken; air fry 8–10 minutes more, shaking halfway, until chicken is cooked through (165°F internal) and vegetables are charred.
  4. Warm tortillas. Build fajitas: tortilla, chicken-and-vegetable mixture, shredded cheese, fresh cilantro, sliced avocado, sour cream, salsa, sliced jalapeños. Serve with lime wedges.
