Frequently Asked Questions

How do I keep grilled chicken juicy and tender?

The key to juicy grilled chicken is marinating it beforehand and not overcooking it. Always use a meat thermometer to check for an internal temperature of 165°F for breasts and 170°F for drumsticks and thighs — this ensures the chicken is cooked through without drying out. Letting the chicken rest for 5 minutes after cooking is also essential as it allows the juices to redistribute throughout the meat before slicing.

Can I use chicken thighs instead of chicken breasts in these recipes?

Absolutely! Chicken thighs are actually more forgiving than breasts as they have a higher fat content, making them naturally juicier and harder to overcook. They work beautifully in recipes like the Huli Huli Chicken, Greek Yogurt Marinated Chicken, Curry Chicken and Rice, and the BBQ Chicken Flatbread. Simply adjust the cooking time slightly as thighs may take a few minutes longer to cook through.

How long should I marinate chicken for the best flavor?

For most of these recipes, marinating for at least 30 minutes will give you great results, but marinating overnight or for up to 24 hours will give you the deepest, most developed flavors. The Greek Yogurt Marinated Chicken benefits from a minimum of 4 to 6 hours, while the Huli Huli Chicken is best marinated overnight. For quick weeknight meals, even 30 minutes in the marinade makes a noticeable difference.

Can I bake these recipes instead of grilling?

Yes! Most of these grilled recipes can easily be adapted for the oven. Preheat your oven to 400°F to 425°F and bake the chicken on a lined baking sheet or rack until it reaches the correct internal temperature. The Greek Yogurt Marinated Chicken, Crispy Baked Chicken Legs, and Sheet Pan Fajitas are already oven-baked recipes. For kabobs, use a broiler on high heat for similar char and caramelization to grilling.

Are these recipes suitable for meal prepping?

Many of these recipes are excellent for meal prep! The Teriyaki Chicken Bowl, Curry Chicken and Rice, Pesto Chicken Quinoa Bowl, and Mexican Chicken Salad all store well in airtight containers in the fridge for up to 4 days. The Huli Huli Chicken and Greek Yogurt Marinated Chicken can also be marinated in advance and kept in the fridge overnight, ready to cook the next day. This makes weeknight dinners a total breeze!

What is the best way to get crispy skin on baked chicken?

The secret to crispy baked chicken skin is to pat the chicken completely dry with paper towels before seasoning — moisture is the enemy of crispiness! Baking on a wire rack rather than directly on the pan also allows hot air to circulate all around the chicken. For the Air Fryer Chicken Wings, the combination of baking powder and cornstarch in the coating is the game-changing trick that creates that incredible shatteringly crispy texture.

Can I make the kabob recipes without a grill?

Absolutely! If you don't have access to an outdoor grill, you can cook kabobs on a grill pan or cast iron skillet on the stovetop over medium-high heat, or under a broiler in the oven set to high. Both methods will give you great results with a nice char on the outside. For the Shrimp Kabobs and Italian Meatball Kabobs especially, a hot grill pan works wonderfully and takes just minutes.

How do I store and reheat leftover chicken dishes?

Store all leftover chicken dishes in airtight containers in the refrigerator for up to 3 to 4 days. For best results, reheat gently on the stovetop over medium-low heat with a splash of broth or water to prevent drying out. The Teriyaki Chicken Bowl and Curry Chicken and Rice reheat especially well. For crispy dishes like the Air Fryer Chicken Wings or Crispy Baked Chicken Legs, reheat in the air fryer or oven at 375°F for 5 to 8 minutes to restore the crispiness.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
