  2. Thread the halloumi, zucchini, bell peppers, and red onion alternately onto the skewers. Brush generously with the herb olive oil.

3. Slow Cooker Pot Roast with Vegetables

A classic chuck roast slow-cooked all day with carrots, potatoes, and onions in a rich, savoury beef gravy. Set it in the morning, come home to a deeply comforting dinner.

Ingredients:

  • 3–4 lb boneless chuck roast
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, roughly chopped
  • 4 cloves garlic, minced
  • 3 medium carrots, cut into chunks
  • 1 lb baby potatoes, halved
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (for gravy)

Instructions:

  1. Season the chuck roast generously with salt and pepper. Heat olive oil in a large skillet over high heat and sear the roast for 3–4 minutes per side until a deep brown crust forms. Transfer to the slow cooker.
  2. Add the onion, garlic, carrots, and potatoes around the roast. Whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary, then pour over everything.
  3. Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours until the meat is fall-apart tender.
  4. Remove the roast and vegetables. Pour the cooking liquid into a saucepan and bring to a simmer. Whisk in the cornstarch slurry and cook for 2–3 minutes until thickened into a gravy.

Ingredients:

  • 1½ lbs large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • Juice of 2 limes
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas, warmed
  • Slaw: 2 cups shredded cabbage, juice of 1 lime, 1 tablespoon olive oil, salt
  • Avocado crema: 1 avocado, juice of 1 lime, 2 tablespoons sour cream, salt

Instructions:

  1. Combine olive oil, garlic, chili powder, cumin, smoked paprika, lime juice, salt, and pepper in a bowl. Add the shrimp and toss to coat. Marinate for 15–20 minutes.
  2. Make the slaw: toss shredded cabbage with lime juice, olive oil, and salt. Set aside.
  3. Make the avocado crema: mash the avocado with lime juice, sour cream, and salt until smooth.
  4. Preheat grill or grill pan to high heat. Thread shrimp onto skewers or cook directly on the grill for 1–2 minutes per side until pink, opaque, and lightly charred.
  5. Assemble tacos: spread avocado crema on warm tortillas, top with slaw and grilled shrimp. Serve with extra lime wedges.

1. Grilled Ribeye with Whiskey Peppercorn Sauce

A thick ribeye grilled over high heat to your perfect doneness, then topped with a rich, creamy whiskey and cracked peppercorn sauce. The ultimate special-occasion steak dinner.

Ingredients:

  • 2 thick ribeye steaks (about 1–1½ inches thick)
  • Salt and coarsely cracked black pepper
  • 1 tablespoon olive oil
  • Whiskey peppercorn sauce: 1 tablespoon butter, 2 shallots (minced), 2 cloves garlic (minced), 2 tablespoons cracked black peppercorns, ¼ cup whiskey or bourbon, 1 cup beef broth, ½ cup heavy cream, salt to taste

Instructions:

  1. Take the steaks out of the fridge 30–60 minutes before cooking. Season generously with salt and cracked black pepper on both sides.
  2. Make the sauce: melt butter in a saucepan over medium heat. Sauté shallots and garlic until softened, about 3 minutes. Add the cracked peppercorns and cook for 1 minute. Carefully pour in the whiskey and let it reduce by half. Add beef broth and simmer until reduced by half again, about 5 minutes. Stir in the heavy cream and simmer until the sauce coats a spoon. Season with salt and keep warm.
  3. Preheat grill to very high heat. Brush steaks lightly with olive oil. Grill for 3–5 minutes per side depending on thickness and desired doneness (135°F for medium-rare).

What is the best cut of meat for grilling?

Ribeye is widely considered the king of grilling cuts thanks to its generous marbling and rich flavour. Sirloin and T-bone are also excellent choices. For something more budget-friendly, flank steak or skirt steak marinate beautifully and grill quickly over high heat.

How do I know when my steak is done without a thermometer?

A meat thermometer is always the most accurate method — 125°F for rare, 135°F for medium-rare, 145°F for medium. If you don't have one, the finger test works: rare feels like the fleshy base of your thumb relaxed, medium-rare feels like it lightly pressed, and medium feels firm. A thermometer is still always recommended for the best results.

How long should meat rest before cutting?

Always rest grilled meats before cutting. Steaks need at least 5–10 minutes, roasts need 15–20 minutes, and whole chickens need 10–15 minutes. Resting allows the juices to redistribute through the meat, so every slice is juicy rather than losing all the moisture to the cutting board.

Can I use a grill pan indoors instead of an outdoor grill?

Yes! A cast iron care grill pan over high heat can replicate the char and sear of an outdoor grill beautifully. Make sure the pan is very hot before adding your meat, open a window for ventilation, and don't overcrowd the pan. You won't get the same smoke flavour, but the crust will be just as good.

What sides go best with grilled meats?

Classic pairings include grilled corn, roasted potatoes, coleslaw, garlic bread, and fresh salads. For heartier mains like ribs or pot roast, loaded mashed potatoes or mac and cheese are perfect. Lighter proteins like salmon or shrimp pair well with rice, slaw, or a simple green salad.
