Ingredients:

  • 1½ lbs ground Wagyu beef, formed into 4 patties (do not overwork the meat)
  • Flaky sea salt and cracked black pepper, to taste
  • 4 brioche buns, split and toasted in butter
  • 1 cup fresh arugula
  • Truffle aioli: ½ cup mayonnaise, 1 tablespoon black truffle oil, 1 clove garlic (minced), 1 teaspoon lemon juice, salt and pepper to taste
  • Crispy shallots: 3 large shallots (very thinly sliced), soaked in buttermilk 15 minutes, dredged in seasoned flour, fried at 350°F for 2–3 minutes until golden

Instructions:

  1. Make the truffle aioli by whisking all ingredients together until smooth. Taste and adjust with more truffle oil or lemon as desired. Refrigerate until needed.
  2. Make the crispy shallots: fry the buttermilk-dipped, flour-dredged shallot rings at 350°F for 2–3 minutes until deeply golden and crispy. Drain on a wire rack and season immediately with flaky salt.
  3. Handle the Wagyu patties as little as possible. Season generously with flaky sea salt and cracked pepper on both sides just before cooking. Cook on a very hot cast iron skillet over high heat for 2–3 minutes per side for medium-rare — Wagyu is best not cooked beyond medium. Rest for 3 minutes.
  4. Spread truffle aioli generously on both bun halves. Place arugula on the bottom bun. Add the Wagyu patty. Pile the crispy shallots over the top. Crown with the top bun. Serve immediately alongside good fries and an appreciation for the finer things.

What is the best beef blend for homemade burger patties?

80/20 ground beef — that is 80% lean meat and 20% fat — is the gold standard for most burger recipes on this list. The fat content keeps the patties juicy, flavourful, and allows for the beautiful caramelization and crust development that makes a great burger. Leaner blends like 90/10 produce drier, less flavourful burgers. For the smash burger specifically, 80/20 is non-negotiable — the fat renders into those irresistible crispy edges on the griddle. The Wagyu burger is a category apart — Wagyu's extraordinary marbling provides its own fat content and produces a richness that standard ground beef cannot replicate.

What is the secret to a perfect smash burger?

Three things: extremely high heat, an immediate and forceful smash, and not touching it again until the flip. The griddle or cast iron care must be preheated until it is genuinely smoking before the beef touches it. The smash must happen within the first 10 seconds — after that the crust has begun to form and smashing will break it. Press the spatula down as hard as you physically can — you want the patty as thin as possible. Then leave it completely alone for 90 seconds. Those crispy, lacy edges only form through sustained contact with a very hot surface. The second side needs only 30–45 seconds. American cheese goes on immediately after the flip and melts from the residual heat.

How do I prevent stuffed burgers (Juicy Lucy, bacon cheddar) from exploding and losing their filling?

The seal is everything. After pressing the two patties together around the filling, go around the entire circumference twice, pinching firmly. The filling should be completely enclosed with no gaps. Refrigerating the assembled patties for 15–30 minutes before cooking helps the seal hold during the first few minutes on the heat. Cook over medium rather than high heat — too much aggressive heat too quickly can cause the patties to puff and burst. Resist any temptation to press down on the patty while it cooks. And for the Juicy Lucy specifically — always wait 5 minutes after cooking. The molten cheese inside is genuinely dangerous fresh off the heat.
