I made this for the first time on a Sunday when I had absolutely nothing planned for dinner and a pack of chicken breasts sitting in the fridge. I threw everything in the slow cooker around noon, forgot about it while helping the kids with homework, and by 6pm the whole house smelled like a buffalo wing shop. My husband walked in and immediately asked what was for dinner — which almost never happens.

What makes this chili work is the combination of buffalo sauce and cream cheese. The buffalo sauce gives it that sharp, tangy heat you get from wings, and the cream cheese pulls it together into something rich and slightly mellowed — not just "spicy soup."   • 1.5 pounds boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) white beans, drained and rinsed

  • 1 cup buffalo wing sauce (I use Frank's RedHot Wings Sauce — medium or hot depending on your preference)
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt (taste first before adding — buffalo sauce is already salty)
  • ¼ teaspoon black pepper
  • 4 ounces cream cheese, cubed and left out 15 minutes before adding
  • ½ cup shredded cheddar cheese (optional, for topping)
  • Chopped green onions (for garnish)

Directions

  1. Load the slow cooker: Place the chicken breasts flat on the bottom of your slow cooker. Pour the black beans, white beans, corn, and diced tomatoes over the top. You don't need to stir anything yet — everything will find its place as it cooks.
  2. Season and sauce: Sprinkle the ranch seasoning, garlic powder, onion powder, paprika, salt, and pepper evenly over the top. Pour the buffalo wing sauce over everything last. Give it one quick stir just to distribute the sauce slightly.
  3. Slow cook: Cover and cook on low for 6–7 hours or high for 3–4 hours. The chicken is ready when it shreds easily with two forks and the beans have softened and soaked up the flavor from the sauce.
  4. Shred the chicken: Remove the chicken breasts and shred them using two forks — or do what I do and shred them in a bowl with a hand mixer in about 30 seconds. Return the shredded chicken to the slow cooker and stir everything together so the chicken soaks up the sauce.
  5. Add cream cheese: Add the cubed cream cheese directly to the slow cooker. Stir gently, then put the lid back on and let it sit on low for another 15 minutes. Stir again until completely smooth. Don't rush this step — if you serve immediately after adding the cream cheese, it stays lumpy.
  6. Serve: Ladle into bowls and top with shredded cheddar, green onions, a drizzle of ranch or blue cheese dressing, or whatever you like. Serve hot.

Tips for Success

  • Cube the cream cheese before it goes in: I learned this after my first attempt produced a chili with visible white blobs floating in it. Cutting the cream cheese into roughly 1-inch cubes increases the surface area, so it melts faster and blends in more evenly. Letting it sit at room temperature for 15 minutes before adding helps too.

  • Taste before adding extra salt: Buffalo sauce varies a lot by brand — some are quite salty on their own. I've made the mistake of following the recipe amount exactly without tasting first, and the chili came out over-seasoned. Add the ½ teaspoon listed, but taste at the end before adding more.

  • Low and slow beats high and fast: I've made this on the high setting when I was short on time and it was fine — but the chicken cooked on low for 6–7 hours is noticeably more tender and the broth has more depth. If you have the time, low is always better for this kind of recipe.

  • Don't drain the tomatoes: The liquid from the canned tomatoes is part of the broth. The first time I made a similar chili I drained everything out of habit — it came out much drier than it should have been. Just pour in the whole can, liquid and all.

  • Use rotisserie chicken to save time: If you're short on prep time or already have cooked chicken on hand, shredded rotisserie chicken works. Skip steps 1 through 3 and just add everything together — cook on high for 1–2 hours to let the flavors come together, then add cream cheese and finish as normal. Walmart and Costco rotisserie chickens both work perfectly here.

Variations

  • Mild version for kids: Use mild buffalo sauce and replace half of it with regular chicken broth. Stir in a tablespoon of sour cream at the end along with the cream cheese. Saad won't go near anything too spicy, so this is the version I make when he wants chili — he actually likes it this way and doesn't realize it's the same recipe.

  • Vegetarian version: Skip the chicken entirely and add an extra can of beans — chickpeas work really well here — plus a can of diced green chiles for more body. The buffalo sauce and ranch seasoning still do their thing even without the chicken. It's a genuinely good bowl of vegetarian chili, not just a consolation version.

  • Low-carb version: Leave out the beans and corn and double the chicken — about 2.5 to 3 pounds total. Add a diced bell pepper and some sliced celery for bulk. The cream cheese keeps it rich and satisfying. It ends up tasting more like a creamy buffalo chicken soup than a chili, but that's not a bad thing.

  • Loaded bowl version: This is how my husband eats it — top the bowl with blue cheese crumbles, a drizzle of ranch, sliced jalapeños, extra buffalo sauce, and crushed tortilla chips. It turns a simple weeknight chili into something that feels like it came from a restaurant. For a game day spread, I put all the toppings in small bowls and let everyone build their own.

  • Instant Pot version: Add all ingredients except cream cheese to the Instant Pot. Cook on high pressure for 20 minutes, then quick release. Shred the chicken, stir in cream cheese, and let it sit on the keep-warm setting for 10 minutes before serving. I haven't tested this as many times as the slow cooker version, so consider it a starting point rather than a guaranteed result.

Store leftovers in an airtight container in the fridge for up to 4 days. This chili actually tastes better the next day after the flavors have had time to settle — I make it on Sunday specifically because Monday's lunch is sorted. To freeze, portion into freezer-safe containers and freeze for up to 3 months. Thaw overnight in the fridge and reheat on the stovetop over medium-low heat, stirring occasionally. If it looks too thick after reheating, add a splash of broth or water and stir.

Can I use frozen chicken breasts in the slow cooker?

Yes, but add 1–2 hours to the cooking time and make sure the internal temperature reaches 165°F before you shred it. I'd recommend cooking on low rather than high if you're starting from frozen — it gives the chicken time to cook through evenly without drying out the edges.

How spicy is this chili?

With a medium buffalo sauce, it's noticeably spicy but not overwhelming for most adults. The cream cheese brings the heat down a bit. If you're sensitive to spice, use mild buffalo sauce and stir in a tablespoon of sour cream at the end. If you want more heat, add extra hot sauce or a pinch of cayenne when you season.

Can I make this chili ahead of time?

Absolutely — this is one of those recipes that's actually better the next day. I often make it on a Sunday, refrigerate it overnight, and reheat on the stovetop Monday evening. The flavors deepen overnight and the broth gets slightly thicker. Just give it a good stir when reheating and add a splash of broth if it's too thick.

How do I thicken the chili if it's too thin?

Two options: take the lid off for the last 30 minutes of cooking and let some liquid evaporate, or stir in 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water.
