Ingredients
  

For the Noodles & Veggies:

  • 10 oz udon noodles or thick Korean noodles or spaghetti
  • 2 tablespoons vegetable oil divided
  • 1 medium onion sliced
  • 2 cups mixed vegetables bell peppers, carrots, mushrooms, cabbage, or bok choy
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 3 green onions sliced, whites and greens separated
  • 1 tablespoon sesame seeds for garnish

For the Gochujang Sauce:

  • 3 tablespoons gochujang (Korean red pepper paste)
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ¼ cup water

Instructions
 

Cook Noodles:

  • Cook noodles according to package instructions. Drain and set aside. Reserve ½ cup of pasta water.

Make Gochujang Sauce:

  • In a small bowl, whisk together gochujang, soy sauce, brown sugar (or honey), rice vinegar, sesame oil, and water until smooth. Set aside.

Stir-Fry Vegetables:
