It was 7 o'clock on a Sunday morning, the griddle was already hot, and my husband was waiting for his buttermilk pancakes. I opened the fridge and realized I had used the last of the buttermilk in a cake two days earlier. Saad was staring at me, Zainab was asking when breakfast would be ready, and the nearest store was twenty minutes away. I stood there with an empty carton and a houseful of hungry people.

Then I remembered my mother's kitchen in Karachi. She never bought buttermilk the way American recipes describe it. When she needed something tangy for a batter or a marinade, she thinned dahi with a little water, or soured milk with a squeeze of lemon. Nobody called it a substitution. It was just cooking with what you had. I stirred a tablespoon of lemon juice into a cup of milk, waited five minutes, and the pancakes came out as fluffy as ever. Nobody noticed a thing.

Since that morning I have collected every ingredient substitution I have tested over the years: the ones that work beautifully, the ones that work in a pinch, and the ones that only work for certain recipes. I built them into this free substitution finder. Type in what you are out of, enter how much your recipe calls for, and you get the exact swap, already measured out, with notes on what each one is best for.

Below the finder, I explain why substitutions work, which ones I trust most, and when it is better not to substitute at all. You will also find swaps for readers in the UK and Australia, alcohol-free swaps for cooking wine, and the desi pantry staples I reach for every week.

HOW TO USE THE SUBSTITUTION FINDER

  1. Type what you are out of. The search understands everyday, British and desi names, so icing sugar, double cream, curd, maida and imli all work.
  2. Enter the amount from your recipe. Use fractions like 1 ½ or ¾, and switch between cups, tablespoons, teaspoons, millilitres, ounces or grams.
  3. Read the ratings. Each swap is marked Best swap, Good swap or In a pinch, so you know how close the result will be to the original.
  4. Check the notes. Every swap tells you how to make it and what it works best for, because a swap that is fine in a marinade may not work in a cake.
  5. Filter if you need to. Tap Vegan, Dairy-free or Gluten-free to hide swaps that do not fit your diet.
  6. Copy or share. Copy any swap to your notes, or copy a link to send the exact swap to a friend.

THE GOLDEN RULE OF SUBSTITUTING

Every ingredient in a recipe has a job. Once you know what that job is, choosing a substitute becomes much easier. Before you swap anything, ask yourself what the ingredient is there to do:

  • Acidity: buttermilk, yogurt and lemon juice react with baking soda to make baked goods rise and taste tender.
  • Fat: butter, oil and cream add richness, moisture and tenderness.
  • Structure: flour and eggs hold everything together.
  • Leavening: baking powder, baking soda and yeast make things rise.
  • Sweetness and moisture: sugars and syrups sweeten, but they also keep baked goods soft and help them brown.
  • Flavor: vanilla, spices, garlic and wine add taste without changing the structure.

A good substitute does the same job. Lemon and milk replace buttermilk because both bring acidity and liquid. Applesauce can replace an egg in a muffin, because muffins need moisture more than structure, but it cannot replace eggs in a soufflé, where the eggs are the structure. The finder already accounts for this, which is why each swap lists what it is best for.

DAIRY SUBSTITUTIONS

Dairy swaps are the ones I use most, simply because cream and buttermilk are the ingredients most likely to run out or spoil before I use them up.

Buttermilk

Stir 1 tablespoon of lemon juice or white vinegar into 1 cup minus 1 tablespoon of milk and let it stand 5 to 10 minutes. It thickens slightly and works in pancakes, biscuits, cakes and fried chicken marinades. Plain yogurt thinned with a little milk, ¾ cup yogurt to ¼ cup milk, is just as good and slightly thicker.

Heavy Cream

For cooking and baking, whisk ¾ cup of whole milk with ¼ cup of melted butter. It works well in sauces and soups like my Rotel pasta fiesta, but it will not whip. If you need whipped cream, chill a can of full-fat coconut cream overnight and whip the thick part, which is also a good vegan option.

Sour Cream

Full-fat Greek yogurt is the closest swap, cup for cup, in dips, baking and casseroles. It tastes a little tangier and works well in recipes like my Cheddar Bay green bean casserole and Mississippi sin quiche. Add yogurt to hot sauces off the heat, because it can split if it boils.

Butter

For baking, vegan butter sticks are the closest swap. Where a recipe uses melted butter, such as muffins or brownies, you can use ¾ cup of vegetable oil for every cup of butter. Oil does not work in recipes that cream butter and sugar together, like most cookies, because oil cannot trap air the way solid butter does.

EGG SUBSTITUTES

Eggs do several jobs at once: they bind, add moisture, help with rise and give structure. That is why no single egg substitute works for everything. These are the swaps I trust, per egg:

  • Flax egg: 1 tablespoon ground flaxseed mixed with 3 tablespoons water, rested 5 to 10 minutes. Best for cookies, muffins, brownies and pancakes.
  • Aquafaba: 3 tablespoons of the liquid from a can of chickpeas. It even whips into meringue.
  • Applesauce or mashed banana: ¼ cup per egg. Best for moist cakes and quick breads.
  • Plain yogurt: ¼ cup per egg, for cakes and muffins.
  • Baking soda and vinegar: 1 teaspoon baking soda plus 1 tablespoon vinegar, for light cakes that need lift.

Egg swaps work best when a recipe uses 1 to 3 eggs. If a recipe calls for 4 or more, the eggs are doing too much of the work, and you will get better results from a recipe written to be egg-free.

SUGAR AND SWEETENER SUBSTITUTIONS

Sugars do more than sweeten. They keep baked goods moist, help them brown and give cookies their chew, so the best swaps keep those jobs in mind.

Brown Sugar

Brown sugar is simply white sugar with molasses. Mix 1 cup of granulated sugar with 1 tablespoon of molasses for light brown sugar, or 2 tablespoons for dark. Use a fork and keep mixing until there are no streaks. In a pinch you can use plain white sugar, but cookies will bake up crisper and less chewy.

Powdered Sugar

Blend granulated sugar with a little cornstarch in a dry blender until it turns to powder. Because powdered sugar is fluffy, you need less granulated sugar than you might think: about ½ cup plus 1 tablespoon of granulated sugar and 1½ teaspoons of cornstarch makes 1 cup of powdered sugar.

Corn Syrup

Golden syrup is the best swap, cup for cup, and it is easy to find in the UK and in many US stores. You can also make a simple syrup from 1 cup of sugar and ¼ cup of water. For recipes like my lazy girl pecan pie bars, golden syrup gives a lovely caramel note. Honey works too, but it browns faster and has a stronger flavor.

Honey and Maple Syrup

Honey, maple syrup and agave syrup can usually replace each other one for one. When you replace granulated sugar with a liquid sweetener, use ¾ cup for every cup of sugar, reduce the other liquids slightly, and lower the oven by 25°F (15°C) so the outside does not brown before the inside is baked. My oven temperature converter can help with that adjustment.

FLOUR, LEAVENING AND BAKING SWAPS

  • Cake flour: 1 cup minus 2 tablespoons all-purpose flour plus 2 tablespoons cornstarch, sifted together twice.
  • Self-rising flour: 1 cup all-purpose flour plus 1½ teaspoons baking powder and ¼ teaspoon salt.
  • Baking powder: ¼ teaspoon baking soda plus ½ teaspoon cream of tartar for every teaspoon.
  • Baking soda: 3 teaspoons baking powder for every teaspoon of soda. The result browns a little less.
  • Cornstarch for thickening: 2 tablespoons all-purpose flour, or 1 tablespoon arrowroot or potato starch, for every tablespoon.
  • Active dry yeast: use ¾ as much instant yeast and skip the proofing step. Going the other way, use 1¼ times as much active dry yeast and proof it first.

Leaveners are the one place where exact amounts matter most, so measure carefully. If your recipe is in grams and your swap is in spoons, my cooking measurement converter will translate it for you.

SUBSTITUTIONS FOR UK AND AUSTRALIAN READERS

Many of my readers in the UK and Australia write to me because an American recipe calls for something they cannot find, or because it is called something different where they live. Often it is the same ingredient with a different name:

  • Powdered sugar is icing sugar, and superfine sugar is caster sugar.
  • Heavy cream is double cream, and half-and-half is closest to single cream.
  • All-purpose flour is plain flour, and self-rising flour is self-raising flour.
  • Baking soda is bicarbonate of soda.
  • Cornstarch is cornflour.
  • Corn syrup is hard to find in the UK, so use golden syrup instead.
  • Graham crackers are best replaced with digestive biscuits, cup for cup, in cheesecake crusts.

Going the other way, if you are baking a British recipe like my Victoria sponge traybake in the US, you can blend regular sugar briefly to make caster sugar, and make self-raising flour with the formula above.

DESI PANTRY SUBSTITUTIONS

Pakistani and Indian recipes rely on a handful of staples that are not always in an American kitchen. These are the swaps I use when I run out:

  • Ginger-garlic paste: 1½ teaspoons grated fresh ginger and 1½ teaspoons minced garlic for every tablespoon.
  • Garam masala: ½ teaspoon cumin, ¼ teaspoon coriander and ¼ teaspoon cinnamon with a pinch of cloves or cardamom, for every teaspoon.
  • Paneer: halloumi for grilling and tikka, or pressed extra-firm tofu for a vegan palak paneer. You can also make your own: about 4 cups of whole milk gives roughly 7 oz of paneer.
  • Ghee: clarified butter, or regular butter over lower heat. For a tarka, neutral oil works too.
  • Tamarind paste: equal parts lime juice and brown sugar for chutneys and sauces.
  • Saffron: nothing truly replaces its flavor, but a tiny pinch of turmeric gives biryani the same golden color.

COOKING WITHOUT ALCOHOL

We do not cook with wine at home, so I have spent years finding swaps that keep the depth wine adds to sauces and stews. For white wine, use 1 cup of chicken or vegetable broth with 1 tablespoon of white wine vinegar or lemon juice. For red wine, use 1 cup of beef broth with 1 tablespoon of red wine vinegar, or unsweetened grape or pomegranate juice with a splash of vinegar. The acidity is what matters most, so do not skip the vinegar.

VEGAN, DAIRY-FREE AND GLUTEN-FREE SWAPS

Use the filters in the finder to see only the swaps that fit your diet. A few that work especially well:

  • Vegan buttermilk: unsweetened soy milk with lemon juice. Soy milk thickens the most, just like real buttermilk.
  • Dairy-free cream: canned coconut cream for curries and desserts, or blended soaked cashews for creamy sauces like my dairy-free mac and cheese.
  • Gluten-free flour: a 1:1 gluten-free baking blend that already contains xanthan gum. Let batters rest 15 minutes before baking.
  • Gluten-free thickeners: arrowroot, potato starch or tapioca starch.
  • Gluten-free soy sauce: tamari, or coconut aminos if you also avoid soy.

Almond flour is another good gluten-free option in recipes written for it, like my blackberry cobbler with almond flour topping. Note that oats are often processed alongside wheat, so choose certified gluten-free oats if you need them.

WHEN NOT TO SUBSTITUTE

Most cooking is forgiving, but a few situations are not. Avoid swaps, or test them first, when:

  • An ingredient is the star. A cheesecake without cream cheese or a lemon tart without lemons will never taste right.
  • You would need several swaps at once. One substitution rarely causes trouble; three in the same cake often do.
  • The recipe depends on precise chemistry. Candy, macarons, meringues and yeast breads are less forgiving than soups and casseroles.
  • It is a big occasion. If it is the cake for a birthday or a dinner for guests, test the swap on a small batch first.

MY TIPS FOR SUCCESSFUL SUBSTITUTIONS

  • Start with the best-rated swap. The ratings in the finder are based on how close the results come to the original.
  • Swap one ingredient at a time when you try something new, so you know what made the difference.
  • Taste as you go in cooking. Coconut aminos are less salty than soy sauce, and Pecorino is saltier than Parmesan.
  • Watch the bake. Liquid sweeteners and dark sugars brown faster, so check a few minutes early.
  • Write it down. When a swap works, note it on your recipe card so you remember next time.

FREQUENTLY ASKED QUESTIONS

These are the substitution questions I hear most often.

What can I use instead of buttermilk?

Stir 1 tablespoon of lemon juice or white vinegar into 1 cup minus 1 tablespoon of milk and let it stand for 5 to 10 minutes. You can also use ¾ cup plain yogurt thinned with ¼ cup milk, or plain kefir cup for cup.

What is the best egg substitute for baking?

A flax egg, made from 1 tablespoon ground flaxseed and 3 tablespoons water, works well in cookies, muffins and brownies. Aquafaba, 3 tablespoons per egg, is best for meringues and light cakes. Egg swaps work best for recipes with 1 to 3 eggs.

How do I make brown sugar from white sugar?

Mix 1 cup of granulated sugar with 1 tablespoon of molasses for light brown sugar, or 2 tablespoons for dark brown sugar, until evenly colored.

What can I substitute for heavy cream?

For cooking and baking, use ¾ cup whole milk mixed with ¼ cup melted butter for every cup of cream. It will not whip. For whipping or a dairy-free option, use chilled full-fat coconut cream.

How do I make cake flour?

Measure 1 cup of all-purpose flour, remove 2 tablespoons, and replace them with 2 tablespoons of cornstarch. Sift together twice before using.

Can I use baking soda instead of baking powder?

Yes, but you need an acid with it. For every teaspoon of baking powder, use ¼ teaspoon of baking soda plus ½ teaspoon of cream of tartar.

What can I use instead of wine in cooking?

For white wine, use broth with 1 tablespoon of white wine vinegar or lemon juice per cup. For red wine, use beef broth or unsweetened grape juice with 1 tablespoon of red wine vinegar per cup.

What is the UK equivalent of corn syrup?

Golden syrup is the closest UK equivalent and can be used cup for cup. It adds a light caramel flavor.

COOK WITH WHAT YOU HAVE

My mother taught me that a good cook is not someone with a fully stocked pantry, but someone who knows what to do when something is missing. I hope this finder saves you a few trips to the store, rescues a few Sunday breakfasts, and gives you the confidence to cook with what you have. Bookmark the page, and the next time you open the fridge and find an empty carton, you will know exactly what to do.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
