Instructions:

  1. Make the raspberry sauce by combining raspberries, sugar, and lemon juice in a pot. Bring to a boil and cook over medium heat until thickened like loose jam. Pour into six clear glasses to a depth of ¾ inch and refrigerate until set.

  • 6 oz white chocolate, finely chopped
  • 16 oz Full-Fat Cream Cheese, softened

  • 1 teaspoon Lemon Juice
  • 1 teaspoon Pure Vanilla Extract
  • ⅛ teaspoon Salt
  • 2 Large Eggs, at room temperature

Instructions:

  1. Make raspberry sauce: mix cornstarch with 1 teaspoon water. Cook raspberries, sugar, and remaining water over medium heat, stirring. Once simmering, add cornstarch mixture and cook 3 minutes. Strain through a fine mesh sieve and cool completely.
  2. Preheat oven to 350°F. Line a 9-inch square pan with parchment paper.
  3. Make crust: pulse Oreos into fine crumbs, mix with melted butter and press firmly into pan. Bake 8 minutes.
  4. Melt white chocolate and let cool slightly. Beat cream cheese and sugar until smooth. Add flour, lemon juice, vanilla, and salt. Beat in eggs one at a time. Stir in cooled white chocolate.
  5. Pour half the filling onto the warm crust. Drizzle with half the raspberry sauce. Add remaining filling then drizzle with remaining sauce. Swirl with a toothpick.

  • 2 tablespoon Sugar
  • 1 teaspoon Rose Water
  • 1 tablespoon Cornstarch
  • 1 Egg, beaten for egg wash
  • 1 tablespoon Sugar for sprinkling
  • Whipped Cream or Rose Cream for serving

Instructions:

  1. Make pastry: combine flour, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough just comes together. Shape into a disc, wrap, and refrigerate 30 minutes.
  2. Preheat oven to 400°F. Toss sliced strawberries with sugar, rose water, and cornstarch until well coated.

  • ½ cup Neutral Oil
  • ½ cup Buttermilk

  • Cream Cheese Frosting: 8 oz Cream Cheese softened, ½ cup Butter softened, 2–3 cups Powdered Sugar, 1 teaspoon Vanilla

Instructions:

  1. Preheat oven to 350°F. Spray two 6-inch round cake pans with nonstick spray and line with parchment paper.
  2. Roast 1 large beet wrapped in foil at 400°F until fork tender, about 45–60 minutes. Cool, peel, and puree until smooth. Measure out ½ cup.
  3. In a large bowl, combine flour, cocoa powder, baking powder, salt, and both sugars. Add oil, buttermilk, vinegar, eggs, vanilla, and beet puree. Whisk until smooth.
  4. Divide batter evenly between pans and tap gently to release air bubbles. Bake 28–33 minutes until a toothpick comes out clean. Cool completely.
  5. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
  6. Stack and frost the cake layers with cream cheese frosting. Refrigerate 30 minutes before slicing. Enjoy!

4. Raspberry Rose Macarons

  4. In a small bowl, combine strawberries, rhubarb, ginger benefits, lemon juice, cornstarch, and sugar. Toss to coat evenly.

Ingredients:

  • 4 Firm Bosc Pears, peeled with stems intact
  • 4 cups Water
  • ½ cup Sugar
  • 3 tablespoon Rose Water
  • 1 Vanilla Pod, split
  • 4–6 Cardamom Pods (optional)
  • Whipped Cream or Vanilla Ice Cream for serving

Instructions:

  1. Combine water, sugar, rose water, vanilla pod, and cardamom pods in a deep pot. Bring to a boil then reduce to a simmer and cook 20 minutes to infuse flavors.
  2. Carefully peel the pears, leaving stems intact. Remove cores from the bottom with a sharp knife if desired.

Instructions:

  1. Preheat oven to 350°F. Prepare four 6-inch cake pans with baking spray and parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Beat butter and sugar until light and fluffy. Add egg whites, sour cream, and vanilla and beat until combined. Alternate adding dry ingredients and milk, beginning and ending with dry ingredients.
  4. Divide batter evenly into 4 bowls. Add increasing amounts of pink food coloring to each bowl to create 4 graduated shades from lightest to deepest pink. Pour into prepared pans.
  5. Bake 22–26 minutes until a toothpick comes out clean. Cool completely before frosting.
  6. Make buttercream: beat butter until fluffy. Add powdered sugar, cream, and vanilla and beat until smooth. Divide and tint in three shades of pink matching the ombre effect.
  7. Stack layers from darkest to lightest. Fill between each layer with buttercream. Apply ombre buttercream to the outside using the three shades from dark at the bottom to light at the top. Smooth and decorate as desired. Enjoy!
