HEALTHY RANCH CHICKEN SALAD

I started making this ranch chicken salad during a stretch when I was trying to get lunch sorted before noon so I could actually sit down and eat instead of picking at whatever the kids left behind. One rotisserie chicken from the store, a tub of Greek yogurt, and a packet of ranch seasoning — and something genuinely good came out of it. That first batch disappeared by the next morning. My husband took half of it to work without telling me.

What makes this version different from a standard chicken salad is the dressing — it's not just mayo. I use half Greek yogurt, half mayo, with dried dill, garlic powder, onion powder, and a squeeze of lemon. It tastes creamy and tangy at the same time, and it's lighter than a full-mayo dressing without tasting like you cut corners. I made it all-yogurt once and it was too sharp, so the small amount of mayo really does matter for balance.

This is one of those recipes I make on Sunday and then eat four different ways across the week — stuffed into a pita, scooped onto crackers, wrapped in romaine leaves, or just eaten straight out of the container with a fork when I'm too tired to do anything else. Zainab likes hers in a wrap with a little extra salt. My husband adds hot sauce every single time, no matter what.

One thing to set expectations on: this salad is best after it's sat in the fridge for at least 20 minutes. I've eaten it immediately and it's fine, but the flavour is genuinely better cold once the ranch has had a chance to soak into the chicken. If you're prepping it for lunch, make it the night before and thank yourself in the morning.

  • Done in under 20 minutes: If you have cooked chicken already — rotisserie, leftover baked, even canned — this comes together in maybe 15 minutes. There's no cooking, no hot pans, no timing anything. I make it while the kettle is boiling and by the time my tea is ready, lunch is done.

  • Actually fills you up: The combination of chicken and Greek yogurt means there's real protein in here. I used to make salads for lunch and then be raiding the pantry by 3pm. This one keeps me full until dinner, which is not something I can say about most salads.

  • Works for meal prep: I make a double batch almost every time because a single batch disappears too fast. It holds up well in the fridge for several days without getting soggy or watery, which is more than I can say for a lot of salads. The texture stays good all week.

  • Endlessly flexible: The base is simple enough that you can go in a lot of directions with it. I've made it spicy, I've added shredded carrots and grapes, I've swapped in tuna when I had no chicken. It's one of those recipes that's more of a template than a fixed thing.

  • No specialty ingredients needed: Everything in this recipe is available at any regular grocery store — Walmart, Kroger, Aldi, Sainsbury's if you're in the UK. You don't need anything from a specialty store. The ranch seasoning packet alone does a lot of the heavy lifting.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced (rotisserie works perfectly)
  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise (or use all Greek yogurt for a tangier, lighter version)
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • ½ cup celery, finely chopped
  • ¼ cup red onion, diced
  • ¼ cup shredded carrots
  • Optional: chopped parsley or chives for garnish

Directions

  • Step 1: Get your chicken ready. If you're not using rotisserie, bake or boil your chicken breast and let it cool completely before shredding. Cold chicken is much easier to shred cleanly, and it stops the warm meat from watering down the dressing when you mix.
  • Step 2: Make the ranch dressing. In a medium bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, dried dill, garlic powder, onion powder, salt, and pepper. Taste it before adding the chicken — you want it well-seasoned at this stage because the chicken and vegetables will dilute it slightly once combined.
  • Step 3: Combine everything. In a large bowl, add the shredded chicken, celery, red onion, and shredded carrots. Pour the ranch dressing over the top and stir until everything is evenly coated. Don't overmix — you want the chicken to stay in pieces, not turn to mush.
  • Step 4: Taste and adjust. Give it a final taste and add more salt, pepper, or lemon juice as needed. If you want a stronger ranch flavour, a pinch more garlic powder at this stage goes a long way.
  • Step 5: Chill before serving. Cover and refrigerate for at least 20 minutes. This step genuinely matters — the dressing soaks into the chicken and the whole thing tastes more cohesive. I've skipped it when I was in a rush and it's noticeably better when you don't.
  • Step 6: Serve and garnish. Scatter chopped parsley or chives on top if you have them. Serve in lettuce wraps, spooned into a pita, spread on toast, or with crackers on the side.

Tips for Success

  • Use cold chicken: I tried making this once with chicken I'd just pulled off the stove, still warm. The dressing turned thin and watery within an hour. Cold chicken — especially straight from the fridge — keeps the texture of the dressing intact and makes mixing cleaner.

  • Chop everything finely and evenly: This matters more than it sounds. When the celery and onion are chunky, the salad doesn't hold together well in a wrap or on a cracker. Fine, even pieces mean every bite has a bit of everything — and it's easier to scoop without things falling out.

  • Season the dressing before mixing: The dressing should taste slightly over-seasoned on its own because the chicken absorbs some of that salt once combined. I under-seasoned it my first few tries and ended up with a bland salad. Taste the dressing solo and make sure it's punchy.

  • Don't skip the rest time: Twenty minutes in the fridge isn't just about chilling the salad — it's when the flavours actually come together. The dill and garlic need time to bloom into the yogurt and coat the chicken properly. I've tasted it right after mixing and again after 30 minutes in the fridge and it's a noticeable difference.

  • Stir before serving each time: After a day in the fridge, the dressing can separate slightly at the bottom. A quick stir before serving brings it back together. Don't add more dressing assuming it's gone dry — it usually just needs to be re-mixed.

Variations

  • Spicy ranch version: Add a few dashes of hot sauce or finely diced jalapeño to the dressing before mixing. My husband does this every time without fail — he keeps a bottle of sriracha next to his bowl. If you want the heat more evenly distributed, mix the hot sauce into the dressing rather than adding it at the end.   • Avocado ranch: Mash one ripe avocado and stir it into the dressing before combining with the chicken. It makes the whole thing richer and creamier. The avocado also means the salad thickens up nicely if you want to use it as a sandwich spread rather than a loose salad.

  • Sweet and crunchy: Add a handful of red grapes (halved) or diced apple along with a small handful of chopped walnuts or pecans. I know it sounds like an odd combination but it works — the sweetness cuts through the tang of the yogurt dressing and the nuts add a texture contrast that makes it more interesting.

  • Swap the protein: Canned tuna works surprisingly well here — drain it thoroughly and flake it before mixing. Shredded turkey is another good option if you have Thanksgiving leftovers or deli turkey on hand. Chickpeas work too for a vegetarian version, though the texture is softer.

  • Dairy-free: Swap the Greek yogurt for a plain unsweetened coconut or oat-based yogurt, and use a vegan mayo. Check your ranch seasoning packet for dairy — most dry mixes are fine, but some contain buttermilk powder. This version is a little less tangy but still works well.

Serving and Storage

Serve this cold, straight from the fridge. My favourite way is stuffed into a toasted pita with a few slices of cucumber inside, but it works just as well in lettuce wraps, spread onto sourdough toast, or scooped onto a plate of crackers — see my Crackers Party Sandwiches for ideas on how to set it up as a spread. You can also pile it over a simple bed of romaine or mixed greens if you want to turn it into a full salad plate. In Pakistan, we'd serve something like this inside a chapati roll — if you have flatbread on hand, that works really well too.

Storage

Store in an airtight container in the fridge for up to 4 days. It actually gets better on day two once the flavours have had overnight to develop. Give it a stir before each serving — the dressing can settle toward the bottom slightly. I don't recommend freezing this; the yogurt dressing breaks apart when thawed and the texture of the vegetables goes soft and watery.

This is one of those recipes I come back to without really planning to. I'll think I'm making it just once to use up leftover chicken and then suddenly it's a weekly thing. The fact that it takes 15 minutes, requires no cooking, and actually keeps well through the week means it earns its place in regular rotation — especially on the weeks when I don't want to think too hard about lunch.

What I appreciate most about it is how well it travels. I pack it for Zainab's school lunch, my husband takes it to work, and I eat the last of it at my desk while I'm editing photos. It holds up in the fridge in a way that a dressed green salad never would. And because the base is so simple, I've never made exactly the same version twice — there's always something different going into it depending on what I have.
