Louisiana Seafood Gumbo is a classic Southern comfort dish that brings together bold spices, tender seafood, and a deep, rich broth. Once you master the roux, the rest comes together with ease, and the result is always satisfying.

This dish is a celebration of seafood, often combining shrimp, crab, and sometimes oysters in a spicy, well-seasoned base. The secret lies in the dark roux—a carefully cooked mix of flour and fat that creates a rich, thick foundation for the gumbo.

Gumbo is traditionally served over white rice, making it a filling meal that warms you from the inside out. Whether served on a rainy evening or during a family gathering, it offers both comfort and a flavourful punch.

While it takes time and care to build the flavours, the process is straightforward and rewarding. Originating from the heart of Creole and Cajun cuisine, gumbo reflects Louisiana’s cultural melting pot with its layers of flavour and tradition.

Louisiana Seafood Gumbo is more than just a soup—it's a tradition. If you're craving bold flavours, hearty textures, and a soul-warming meal, this gumbo won’t disappoint. Every spoonful tells a story of cultural fusion and culinary heritage.

WHY YOU WILL LOVE THIS RECIPE

  • Authentic Southern comfort: This gumbo brings true Louisiana flavour with its deep roux base, rich spices, and classic Southern seafood medley.

  • Layered, complex flavour: Slow-simmered ingredients develop incredible depth, with savoury seafood, herbs, and spice marrying beautifully in every spoonful.

  • Perfect for gatherings: A big pot of gumbo is ideal for feeding a crowd, making it great for parties, holidays, or family dinners.

  • Customisable heat levels: You can easily adjust the cayenne or hot sauce to make it mild for kids or fiery for spice lovers.

  • A complete meal: With seafood, veggies, and rice all in one bowl, this gumbo is hearty enough to stand alone as a full meal.

  • Soul-warming and satisfying: The warmth of the broth and the comfort of seafood make this a perfect cold-weather or rainy-day dish.

  • Rich cultural tradition: Making gumbo is more than cooking—it’s experiencing a piece of Southern heritage that’s been passed through generations.

INGREDIENTS

  • ½ cup vegetable oil
  • ½ cup all-purpose flour
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 (10 oz) can diced tomatoes with green chilies
  • 6 cups seafood or chicken stock
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 pound shrimp, peeled and deveined
  • 1 pound lump crab meat
  • 1 cup okra, sliced
  • ½ teaspoon filé powder (optional)
  • Cooked white rice, for serving
  • Fresh parsley and green onions, for garnish

DIRECTIONS

  • Step No.1: Make the roux
In a large Dutch oven, heat oil over medium heat. Whisk in flour and cook, stirring constantly, until it turns a deep chocolate brown.

  • Step No.2: Sauté vegetables
Add onion, bell pepper, celery, and health benefits of garlic to the roux. Cook for 5–7 minutes until the vegetables are soft and fragrant.

  • Step No.3: Add liquids and spices
Stir in the diced tomatoes, stock, Cajun seasoning, thyme, bay leaves, salt, and pepper. Bring to a gentle boil and simmer for 30 minutes.

  • Step No.4: Add okra and seafood
Stir in okra and cook for 10 minutes. Then add shrimp and crab meat. Simmer gently until shrimp are pink and cooked through.

  • Step No.5: Finish and serve
Remove bay leaves. If using, stir in filé powder for extra thickness. Serve hot over rice with chopped parsley and green onions.

TIPS FOR SUCCESS

  • Perfect the roux: Stir constantly and patiently cook the roux until it's deep brown—it’s the key to authentic gumbo flavour and depth.

  • Use fresh seafood when possible: Fresh shrimp, crab, or oysters add better flavour and texture compared to frozen alternatives, though frozen works in a pinch.

  • Add seafood at the end: To avoid overcooking, stir in delicate seafood like shrimp or crab toward the end of the simmering process.

  • Use the trinity base: Sauté onions, celery, and bell peppers thoroughly—this “holy trinity” builds a strong foundational flavour for your gumbo.

  • Skim excess fat or foam: For a cleaner finish, skim off any foam or fat that rises during simmering to keep your broth rich but not greasy.

  • Serve with warm rice: Spoon gumbo over freshly cooked white rice for a comforting and traditional Southern-style presentation.

  • Let it rest before serving: Allow gumbo to sit for 15–30 minutes after cooking so the flavours fully meld and deepen before eating.

VARIATIONS

  • Add andouille sausage: For a heartier version, include sliced andouille or smoked sausage to add bold, spicy flavour alongside the seafood.

  • Make it spicier: Boost heat with extra cayenne, Tabasco, or jalapeños if you enjoy gumbo with a fiery kick.

  • Try okra thickener: Instead of file powder, add sliced okra to help thicken your gumbo naturally while giving it a traditional twist.

  • Include different seafood: Use crawfish, scallops, or even chunks of firm fish like catfish or snapper to diversify the seafood profile.

  • Serve without rice: For a lighter option, skip the rice and enjoy gumbo more like a hearty stew with crusty bread.

  • Make it gluten-free diet: Use a gluten-free flour for the roux and ensure all other ingredients are certified gluten-free for sensitive diets.

  • Add corn or tomatoes: Add sweet corn kernels or stewed tomatoes to introduce a slightly different flavour and texture to your gumbo.

SERVING AND STORAGE

Serving

Serve hot over fluffy white rice with fresh parsley and sliced green onions for added colour and flavour.

Storage

Cool completely, then refrigerate in an airtight container for up to 4 days. Gumbo also freezes well for up to 2 months.

FAQ

Can I make the roux ahead of time?

Yes, prepare and refrigerate it for up to 3 days or freeze it for later use.

What is filé powder, and is it necessary?

Filé powder is ground sassafras used for thickening and flavour. It’s optional but traditional in many gumbo recipes.

Can I use frozen seafood?

Yes, just make sure it’s fully thawed and drained before adding to the gumbo.

How spicy is this gumbo?

Moderately spicy from Cajun seasoning; adjust the heat by adding more or less according to taste.

Is gumbo a soup or a stew?

It’s a thick, stew-like dish traditionally served over rice—it falls somewhere between soup and stew in texture.

Louisiana Seafood Gumbo is a soulful, flavour-packed dish that brings warmth and joy with every spoonful.

Making gumbo from scratch may seem intimidating, but the process is straightforward and worth every step.

From there, each added ingredient enhances the richness and heartiness of the final dish.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.
