Just layer, set, and wake up to something truly satisfying. It’s designed for hungry families, holiday mornings, or weekend guests. This casserole reheats beautifully, so any leftovers make great next-day breakfasts or quick lunches during the week.

WHY YOU WILL LOVE THIS RECIPE

  • Feeds a Big Group: Ideal for holidays, guests, or large families—this recipe easily serves 8 to 10 people.

  • One-Pot Simplicity: Everything cooks in the Crock Pot, meaning less cleanup and no need for multiple pans.

  • Customisable Layers: Mix and match meats, cheeses, or add vegetables to suit your taste or dietary preferences.

  • Satisfying and Filling: With sausage, eggs, potatoes, and cheese, this breakfast is a hearty way to start the day.

  • Perfect for Camping: Plug in your slow cooker at the site and wake up to a hot, comforting breakfast.

  • Minimal Effort, Big Results: It’s one of those recipes that takes little work but delivers big flavour and comfort.

INGREDIENTS

  • 1 (26 oz) bag frozen shredded hash browns
  • 1 lb breakfast sausage, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 small onion, chopped
  • 12 large eggs
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Butter or nonstick spray (for greasing slow cooker)

DIRECTIONS

  • Step No.1: Grease your slow cooker
Use butter or nonstick spray to coat the inside of your Crock Pot so the ingredients don’t stick during cooking.

  • Step No.2: Layer the hash browns and sausage
Start with a layer of hash browns, followed by sausage and chopped onions. Repeat the layers two to three times.

  • Step No.3: Add the cheese
Sprinkle shredded cheddar cheese over each layer or just on top, depending on how cheesy you want the final dish.

  • Step No.4: Whisk the eggs and milk
In a large bowl, whisk together eggs, milk, salt, and pepper. Make sure everything is fully combined and smooth.

  • Step No.5: Pour the egg mixture
Slowly pour the egg mixture over the layered ingredients in the Crock Pot, making sure it spreads evenly.

  • Step No.6: Cook the casserole
Cover and cook on low for 7–8 hours or on high for 3–4 hours, until the eggs are fully set and firm in the centre.

  • Step No.7: Let it rest and serve
Once done, turn off the heat and let it sit for 10 minutes. Slice and serve warm directly from the Crock Pot.

TIPS FOR SUCCESS

  • Pre-Cook the Sausage: Browning the sausage in advance adds flavour and prevents the dish from becoming greasy.

  • Layer Evenly: Uniform layers help everything cook evenly and ensure each bite has all the ingredients.

  • Don't Overmix Eggs: Just whisk until smooth—overmixing can make the eggs rubbery.

  • Use Frozen Hash Browns: No need to thaw. Frozen hash browns cook beautifully over low heat.

  • Let It Sit Before Serving: A short rest helps the casserole firm up and slice neatly.

  • Use a Liner for Easy Cleanup: A slow cooker liner makes cleanup faster and prevents stuck-on cheese.

  • Test Doneness Early: Check by inserting a knife into the centre. If it comes out clean, it’s ready.

VARIATIONS

  • Southwest Style: Add black beans, bell peppers, and pepper jack cheese for a Tex-Mex twist.

  • vegetarian diet Option: Skip the sausage and add sautéed mushrooms, spinach, or zucchini for a veggie-filled version.

  • Bacon Swap: Use cooked, crumbled bacon instead of sausage for a smoky flavour profile.

  • Extra Cheesy: Mix cheddar with mozzarella or gouda for even more gooey richness.

  • Spicy Kick: Add jalapeños or a splash of hot sauce to the egg mixture for heat.

  • Mini Individual Portions: Make in smaller Crock Pots or oven-safe ramekins for custom servings.

  • Dairy-Free Version: Use plant-based cheese and milk alternatives for a dairy-free breakfast casserole.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
