WHY YOU WILL LOVE THIS RECIPE

  • Ultimate comfort food: A bowl of creamy, cheesy soup with hearty sausage and potatoes makes any day feel warm and comforting.

  • Simple ingredients only: Pantry staples like sausage, potatoes, cheese, and broth come together quickly for a satisfying family meal.

  • Rich, savoury flavour: The combination of sausage and cheddar adds a bold, satisfying flavour in every spoonful.

  • Easy to customise: Use spicy sausage, different cheeses, or add extra vegetables based on what you have on hand.

  • Great for leftovers: This soup tastes even better the next day, making it perfect for meal prep or batch cooking.

INGREDIENTS

  • 1 pound sausage, crumbled
  • 4 cups potatoes, peeled and diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 green onions, sliced (for garnish)

DIRECTIONS

  • Step No.1: Cook sausage and sauté vegetables
In a large pot, cook crumbled sausage over medium heat until browned. Remove sausage and set aside. In the same pot, melt butter and sauté onion and garlic until soft.

  • Step No.2: Prepare potatoes and broth
Add diced potatoes to the pot with onions and garlic. Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.

  • Step No.3: Thicken the soup
In a small bowl, mix flour with a little water to form a slurry. Stir slurry into the soup and cook for 5 minutes until slightly thickened.

  • STEP NO.4:Add sausage and cheese
Return cooked sausage to the pot. Stir in shredded cheddar cheese and heavy cream until cheese melts and soup is creamy.

  • Step No.5: Season and garnish
Season soup with salt and pepper to taste. Garnish with sliced green onions before serving.

TIPS FOR SUCCESS

  • Use waxy potatoes: Yukon gold or red potatoes hold their shape well and offer a creamy bite when cooked in soup.

  • Shred your own cheese: Pre-shredded cheese can clump. Shredding your own melts better and adds smoother texture.

  • Simmer gently: Avoid boiling after adding cream or cheese to prevent curdling or a gritty texture.

  • Add veggies if desired: Stir in corn, spinach, or carrots for added nutrition information and colour without changing the base.

  • Cook sausage first: Browning sausage adds depth and prevents it from being too greasy in the finished soup.

VARIATIONS

  • Make it spicy: Use hot italian sausage or add red pepper flakes for extra heat and bold flavour.

  • Swap the cheese: Try pepper jack, gouda, or mozzarella instead of cheddar for a new twist on the classic.

  • Go vegetarian diet: Skip sausage and use plant-based sausage or extra vegetables like mushrooms and zucchini.

  • Try a thicker soup: Mash some potatoes in the pot or add more flour for a thicker, chunkier consistency.

  • Add bacon topping: Crispy bacon bits sprinkled on top add crunch and smokiness that complements the soup well.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
