Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound Italian sausage mild or spicy, casing removed
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups russet potatoes peeled and diced
  • 3 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley chopped (optional, for garnish)

Instructions
 

Cook the Sausage:

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove and set aside.

Sauté Aromatics:

  • In the same pot, add onion and garlic. Sauté until soft and fragrant, about 3–4 minutes.

Simmer the Potatoes:

  • Add diced potatoes, chicken broth, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10–12 minutes.

Add Dairy & Cheese:

  • Stir in milk, cream, and cheddar cheese. Cook over low heat, stirring until cheese is melted and soup is creamy.

Combine & Season:

  • Return cooked sausage to the pot. Season with salt and pepper to taste. Heat through for another 5 minutes.

Serve:

  • Ladle into bowls and garnish with chopped parsley if desired. Serve warm with bread or crackers.

Notes

Make Ahead:
You can prepare the soup ahead of time and store it in the fridge for up to 3 days. Reheat gently before serving.
Customizing the Flavour:
Try adding chopped spinach or kale at the end for extra nutrition. Swap cheddar for pepper jack for a spicy twist.
