My husband doesn't really love broccoli — except in this. That's the sentence that made me realize I needed to write this recipe down properly, because it keeps coming up every time someone asks me what I cook when I want something cheesy and filling without a lot of fuss. This is my take on Cracker Barrel's broccoli cheddar chicken, which I tried on a road trip a few years back and couldn't stop thinking about afterward.

The method here is simple: you sear the chicken in a skillet until it's golden, steam some broccoli, mix it with sour cream and cheddar, pile it on top, then finish everything in the oven for 10 to 15 minutes until the cheese is bubbling. I know that sounds almost too easy, but that's genuinely all it is. The Parmesan on top is what gives it that slightly crisp top layer that makes it look like you worked harder than you did.   2. Season and sear the chicken. Pat the chicken breasts dry with paper towels, then season both sides with garlic powder, onion powder, salt, and pepper. Heat the olive oil in a heavy skillet over medium heat and cook the chicken for 5 to 7 minutes per side until golden brown and cooked through. Don't rush this — getting a proper sear on the outside is what keeps the chicken from tasting bland under all that topping. Set aside.
  3. Steam the broccoli. While the chicken cooks, steam your broccoli florets until just tender — about 4 minutes in a microwave-safe bowl with a splash of water and a plate on top works fine if you don't have a steamer. Once it's done, chop it into small pieces so it spreads evenly over the chicken.
  4. Mix the topping. In a bowl, combine the chopped steamed broccoli, sour cream, and shredded cheddar. Stir until everything is evenly mixed. This is the step you can do the night before if you want to get ahead.
  5. Assemble in a baking dish. Transfer the seared chicken breasts to a baking dish in a single layer. Spoon the broccoli-cheddar mixture evenly over each breast — don't be shy with it. Then sprinkle the Parmesan over the top of everything.
  6. Bake. Put the dish in the preheated oven for 10 to 15 minutes, until the cheese on top is melted, bubbly, and just starting to turn golden at the edges. Serve immediately.

Tips for Success

  • Dry the chicken before you season it: I skipped this the first couple of times I made the recipe and wondered why I wasn't getting a good sear. Pat the chicken breasts dry with paper towels before the seasoning goes on. Moisture on the surface makes the chicken steam in the pan instead of brown. It's a 10-second step that makes a visible difference.

  • Don't skip the sear even though it's going in the oven: The oven step finishes the topping, but it doesn't do much for the chicken itself in terms of color or flavor. The golden crust you get from the skillet is what makes the chicken taste like something rather than just a vehicle for cheese. Give it the full 5 to 7 minutes per side.

  • Chop the broccoli small: I tried leaving the florets large once and the topping slid around instead of staying put. When the broccoli is chopped into small pieces — roughly a half-inch or so — it mixes into the sour cream and cheddar properly and sits on the chicken instead of falling off the sides. Small matters here.

  • Use block cheddar, not pre-shredded: Pre-shredded cheese has a coating that keeps it from clumping in the bag — but that same coating makes it melt a bit unevenly. If you have a few extra minutes, grating your own cheddar from a block gives you a smoother, creamier result in the topping. That said, I've used the pre-shredded bags from Walmart plenty of times when I'm in a rush and it still tastes good.

  • Let it rest 2 minutes before serving: Right out of the oven the topping is very hot and a little liquidy. Two minutes of rest lets it firm up just slightly so it doesn't all run off when you serve it. It also means no one burns the roof of their mouth, which has happened at my table more than once with this dish.

  • Add bacon on top: Crispy crumbled bacon scattered over the Parmesan before it goes in the oven makes this feel more like a restaurant dish. I render the bacon in the same skillet I used for the chicken — one less pan — then crumble it over right before baking. My husband requests this version specifically when we have guests over.

  • Swap the cheese: Cheddar is the classic here, but Monterey Jack gives you a milder, creamier melt, and Gouda adds a slightly smoky note that works really well. I've also used a half-and-half mix of cheddar and mozzarella when that's what I had — the mozzarella stretches nicely and the cheddar keeps the flavor sharp.

  • Make it vegetarian: Skip the chicken and use this topping over thick slices of roasted cauliflower or a bed of sautéed mushrooms and zucchini in the baking dish. You can, but thaw it completely and squeeze out as much water as you can before you chop and mix it in. Frozen broccoli holds a lot of moisture, and if you skip that step the topping ends up watery instead of creamy. Fresh is easier here — even the pre-cut florets from the produce section work perfectly.

Can I make this ahead of time?

Yes — the broccoli mixture (broccoli, sour cream, cheddar) can be made up to 2 days ahead and kept covered in the fridge. When you're ready to cook, just sear the chicken fresh, assemble, and bake. I wouldn't assemble the whole dish raw and refrigerate overnight, because the moisture from the topping soaks into the chicken and the sear loses its texture.

How do I know when the chicken is fully cooked?

The safest way is a meat thermometer — you want 165°F (74°C) at the thickest part. If you don't have one, cut into the thickest breast after the stovetop sear; the juices should run clear and there should be no pink in the center. The chicken continues cooking slightly in the oven, so if it's just at 165°F coming off the stove, the oven step will keep it there without drying it out.

Can I use chicken thighs instead of breasts?

Boneless, skinless thighs work really well here — they're a bit more forgiving than breasts if you accidentally cook them a minute too long. The cook time on the stovetop stays about the same, though thighs may need an extra minute or two per side depending on thickness. The topping and oven step stay identical.

What can I substitute for sour cream?

Plain full-fat Greek yogurt is the closest swap and works almost identically in the topping — same creamy texture, same slight tang. I've also used cream cheese softened and stirred until smooth, though that gives a richer, denser result. I wouldn't use regular yogurt (too thin) or anything low-fat, because the topping can get a bit watery when it bakes.

This is one of those recipes that I keep coming back to because it requires almost no thinking once you've made it once. The steps are simple enough that I can talk to my kids while I'm cooking it, which is not something I can say about everything in my kitchen. The topping does the heavy lifting flavor-wise, and the oven does the rest — there's no babysitting required.
