Ingredients

For the Peppers:

  • 6 large bell peppers (any color)
  • 1 tablespoon olive oil

For the Filling:

  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice (white or brown)
  • ½ cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheese (cheddar, mozzarella, or Parmesan)

For the Sauce:

  • 1 can (15 oz) tomato sauce
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon sugar
  • ½ teaspoon garlic powder

Directions

Step 1: Prepare the Peppers

  • Preheat the oven to 375°F (190°C).

  • Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush them with olive oil.

  • Place the peppers in a baking dish and bake for 10 minutes to slightly soften them.

Step 2: Cook the Filling

  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.

  • Add onion and garlic, cooking until softened.

  • Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Let it simmer for a few minutes, then remove from heat.

  • Mix in half of the shredded cheese.

Step 3: Stuff the Peppers

  • Fill each pepper with the beef and rice mixture.

  • In a bowl, mix tomato sauce, Worcestershire sauce, sugar, and garlic powder. Pour over the stuffed peppers.

Step 4: Bake

  • Cover the dish with foil and bake for 25 minutes.

  • Remove the foil, sprinkle the remaining cheese on top, and bake for another 10 minutes until the cheese melts and peppers are tender.

Serving and Storage

Serving

Serve hot, garnished with fresh parsley. Pair with a side salad, roasted vegetables, or garlic bread for a complete meal.

Storage

  • Refrigeration: Store leftovers in an airtight container for up to 4 days.

  • Freezing: Freeze stuffed peppers in an airtight container for up to 3 months. Reheat in the oven at 350°F until warm.

Tips for Success

  • Use Firm Peppers: Choose bell peppers that are firm and even in size for the best results.

  • Pre-Bake Peppers: Baking them before stuffing ensures they become tender without being too soft.

  • Drain Excess Liquid: Prevent a soggy filling by draining canned tomatoes and cooked beef properly.

  • Add Extra Flavor: Mix in Worcestershire sauce or a splash of hot sauce for a bolder taste.

  • Try Different Cheeses: Experiment with provolone, feta, or gouda for a unique twist.

Variations

  • Turkey or Chicken: Swap ground beef for ground turkey or chicken for a leaner version.

  • Vegetarian Stuffed Peppers: Use black beans, quinoa, and mushrooms instead of meat.

  • Spicy Kick: Add chopped jalapeños or red pepper flakes for some heat.

  • Low-Carb Option: Replace rice with cauliflower rice for a ketogenic diet-friendly version.

  • Cheesy Overload: Top with extra cheese or mix some into the sauce for a creamier dish.

FAQ

Ingredients

  • 4 large bell peppers any color, tops and seeds removed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 pound ground beef or a mixture of beef and pork
  • 1 cup cooked rice white or brown
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1 8 ounce can tomato sauce
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon black pepper
  • Salt to taste
  • Optional: ½ cup shredded mozzarella cheese or cheddar cheese for topping

Instructions

  • Prepare peppers: Cut the tops off the bell peppers and remove the seeds and membranes. You can stand the peppers upside down to help drain any excess moisture.
  • Sauté vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 5-7 minutes, until softened. Add the minced garlic and cook for 1 minute more, until fragrant.
  • Brown meat: Add the ground beef (or meat mixture) to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  • Combine filling ingredients: Stir in the cooked rice, diced tomatoes (undrained), tomato sauce, oregano, basil, black pepper, and salt. Mix well. Taste and adjust seasonings as needed.
  • Preheat oven: Preheat oven to 375°F (190°C).
  • Stuff peppers: Fill each bell pepper with the meat and rice mixture. Don't overpack them but fill them close to the top.
  • Bake: Place the stuffed peppers in a baking dish (you may need to add a small amount of water or broth to the bottom of the dish to prevent sticking). Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for another 15-30 minutes, or until the peppers are tender. Check for tenderness by piercing with a fork - they should give slightly.
  • Add cheese (optional): If desired, sprinkle the shredded cheese over the top of the stuffed peppers during the last 5 minutes of baking.
  • Serve: Serve the stuffed peppers hot.

Notes

  • Peppers: You can use any color of bell pepper. Green peppers are traditional, but red, yellow, and orange peppers add color and a slightly sweeter flavor.
  • Meat: You can use lean ground beef, ground turkey, Italian sausage, or a combination of meats.
  • Rice: Cook the rice ahead of time to save time.
  • Tomatoes: Diced tomatoes and tomato sauce add flavor and moisture to the filling.
  • Seasoning: Adjust the seasonings to your liking. You can add other herbs and spices, such as chili powder, cumin, or paprika.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.

— Sana
