  2. Prepare the breading: In a separate large bowl, whisk together the flour, cornstarch, salt, pepper, garlic powder, paprika, and cayenne if you're using it. The cornstarch is what gives you the crunch, so don't skip it.
  3. Bread the chicken: Take each piece of chicken out of the buttermilk, letting the excess drip off. Press it firmly into the flour mixture, making sure every surface is coated. Press the breading on — don't just dust it. For extra crunch, dip it back in the buttermilk and back into the flour for a second coat.
  4. Set up and bake: Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper. Yes, and honestly I prefer thighs. They have a little more fat in them, which means they stay juicier during the longer bake time. Breasts work too — just be careful not to overbake them, because they dry out faster. Either way, pull the chicken at 165°F internal temperature and you'll be fine.

What if I don't have buttermilk?

Make a quick substitute: add 1 tablespoon of white vinegar or lemon juice to 1 cup of regular whole milk, stir, and let it sit for 5 minutes. It curdles slightly and works the same way as buttermilk for marinating. I've done this plenty of times when I forgot to grab buttermilk at the store.

Can I prepare any of this ahead of time?

The chicken can marinate in the buttermilk overnight in the fridge — that actually improves the flavor and tenderness. The glaze can also be made ahead and stored in a jar in the fridge for up to a week; just warm it up gently before using. What I don't recommend doing ahead is breading the chicken — coat it right before it goes into the oven for the best texture.

How do I keep the chicken crispy if I'm serving it to a group?

Keep the baked chicken and the glaze separate until the moment people eat. Set out the chicken on a platter and the glaze in a small bowl or pitcher and let people pour it on themselves. Once the glaze sits on the coating for more than 10 minutes, it softens. Serving it separately is the only real solution I've found.

Can I freeze this chicken?

I wouldn't. Breaded baked chicken doesn't freeze well — the coating absorbs moisture as it thaws and goes from crunchy to gummy. If you want to meal prep, freeze the raw marinating chicken before breading, then bread and bake it fresh when you're ready to eat. That works much better.
