  3. Garnish with fresh parsley and a few whole olives on top of the hummus.
  4. Serve immediately as an appetizer or snack. Replenish hummus and veggies as needed throughout the party.

33. Ba's Best Tabbouleh

Tabbouleh salad

The gold standard tabbouleh — heavily parsley-forward with fine bulgur, juicy ripe tomatoes, crisp cucumber, green onion, and a bright lemon and olive oil dressing. Light, zesty, and perfect alongside grilled meats, falafel, or as a standalone dish.

Ingredients:

  • ½ cup fine bulgur wheat
  • 3 cups fresh flat-leaf parsley, finely chopped
  • ½ cup fresh mint leaves, finely chopped
  • 2 medium tomatoes, finely diced
  • 1 small cucumber, finely diced
  • 4 green onions, thinly sliced
  • Juice of 2 lemons
  • ¼ cup olive oil
  • Salt and pepper, to taste

Instructions:

  1. Place the bulgur in a bowl and cover with boiling water. Let soak for 15–20 minutes until just tender. Drain any excess water and fluff with a fork. Let cool.
  2. Finely chop the parsley, mint, tomatoes, cucumber, and green onions and add to a large bowl.
  3. Add the cooled bulgur. Pour the lemon juice and olive oil over everything and toss well to combine. Season generously with salt and pepper.
  4. Taste and adjust with more lemon juice or salt as needed. Refrigerate for at least 30 minutes before serving for best flavour.

32. Easy Falafel

Easy falafel recipe

Perfectly crispy on the outside and wonderfully fluffy inside — these easy falafels are made from scratch with canned or dried chickpeas, fresh herbs, and warm spices. Great stuffed in pita with tahini sauce, tossed over salads, or served as a satisfying snack.

Ingredients:

  • 1 (15 oz) can chickpeas, drained and rinsed (or 1½ cups dried chickpeas soaked overnight)

  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 3 tablespoons all-purpose flour or chickpea flour

Instructions:

  1. Add all ingredients except the flour to a food processor. Pulse until everything is finely ground and comes together as a slightly chunky mixture — do not over-process into a paste.
  2. Transfer to a bowl and stir in the flour. Refrigerate for 30 minutes to firm up.
  3. Shape the mixture into small balls or patties, about 1½ inches wide.
  4. To fry: heat 2 inches of oil to 350°F and fry for 3–4 minutes until deep golden brown. To bake: brush with olive oil and bake at 400°F for 20–25 minutes, flipping once. Serve with tahini sauce and warm pita.

11. Sautéed Spinach with Garlic and Lemon

Sautéed spinach with garlic and lemon

The simplest, most satisfying side dish — fresh spinach wilted in garlic-infused olive oil and finished with a bright squeeze of lemon and a pinch of red pepper flakes. On the table in 5 minutes and pairs beautifully with everything from grilled fish to pasta.

Ingredients:

  • 1 lb fresh baby spinach
  • 3 tablespoons olive oil
  • 4 cloves garlic, thinly sliced
  • Juice of ½ lemon
  • Pinch of red pepper flakes
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes and cook for 1–2 minutes until the garlic is fragrant and lightly golden — watch carefully so it does not burn.
  2. Add the spinach in large handfuls, tossing with tongs as it wilts. Add more spinach as each batch reduces in size.
  3. Cook for 2–3 minutes total until all the spinach is wilted. Season with salt and pepper.
  4. Squeeze lemon juice over the top, toss once more, and serve immediately.

  • ¼ cup fresh mint leaves, chopped
  • 3 tablespoons olive oil
  • Juice of 1½ lemons
  • 1 teaspoon sumac
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions:

  1. Toast the torn pita pieces in a 375°F oven for 8–10 minutes until golden and crispy. Set aside.
  2. Whisk together the olive oil, lemon juice, sumac, garlic, salt, and pepper to make the mint dressing. Stir in the chopped mint.
  3. In a large bowl, combine the lettuce, cherry tomatoes, cucumber, radishes, green onion, and parsley.
  4. Add the toasted pita pieces and pour the dressing over. Toss well and serve immediately — the pita should still have some crunch.

9. The Creamiest Hummus and Pita Bread

Ingredients:

  • 2 (15 oz) cans chickpeas, drained (reserve the liquid)
  • ½ cup good-quality tahini
  • Juice of 2 lemons
  • 2 cloves garlic
  • 3 tablespoons olive oil, plus more for serving
  • 4–6 tablespoons reserved chickpea liquid (aquafaba), to adjust consistency

  • Smoked paprika and olive oil, for topping

  1. Add the tahini and lemon juice to a food processor and process for 1 full minute until very light and creamy. Add the garlic, olive oil, and salt and process for another 30 seconds.

5. Melitzanosalata (Greek Eggplant Dip)

Melitzanosalata Greek eggplant dip

The Greek cousin of baba ganoush — roasted eggplant mashed with olive oil, garlic, lemon, and fresh parsley into a rustic, flavourful dip. Smokier and chunkier in texture than its Middle Eastern counterpart, it is absolutely perfect spread on bread or served alongside grilled meats.

Ingredients:

  • 2 large eggplants
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil, plus more for serving
  • Juice of 1 lemon
  • 2 tablespoons red wine vinegar
  • ¼ cup fresh parsley, finely chopped
  • Salt and pepper, to taste
  • Crusty bread or pita, for serving

Instructions:

  1. Roast the eggplants directly over a gas flame or under a very hot broiler, turning every few minutes, until completely blackened and collapsed — about 15–20 minutes. Let cool.
  2. Peel and discard the charred skin. Place the soft eggplant flesh in a colander and let drain for 10 minutes to remove excess liquid.
  3. Roughly chop the eggplant flesh — do not blend, this dip should have a rustic texture. Transfer to a bowl.
  4. Stir in the garlic, olive oil, lemon juice, red wine vinegar, parsley, salt, and pepper. Taste and adjust seasoning. Drizzle with extra olive oil before serving with crusty bread.

  2. Thread the shrimp onto skewers, about 4–5 per skewer.

FAQs

What makes Mediterranean food so healthy?

The Mediterranean diet is consistently ranked as one of the world's healthiest eating patterns. It emphasizes heart-healthy olive oil, plant proteins from legumes and chickpeas, fresh vegetables and herbs, whole grains, and lean proteins like fish and chicken. It is naturally low in processed foods and refined sugars, and rich in antioxidants, fibre, and omega-3 fatty acids.

What are the essential pantry staples for Mediterranean cooking?

Keep your pantry stocked with good-quality extra-virgin olive oil, canned chickpeas and lentils, canned tomatoes, tahini, dried oregano and cumin, kalamata olives, capers, and red wine vinegar. In the fridge, always have feta cheese, Greek yogurt, and fresh lemons — with these ingredients you can pull together almost any recipe on this list at a moment's notice.

Can I make these recipes ahead of time?

Most Mediterranean recipes are excellent for meal prep. Salads like tabbouleh, Greek lentil salad, and Mediterranean quinoa salad keep for 3–4 days and improve overnight. Soups and stews like lentil soup and Spanish chickpea stew freeze beautifully for up to 3 months. Dips like hummus, baba ganoush, and tzatziki keep in the fridge for up to 5 days and are great for quick snacking throughout the week.

What is the difference between baba ganoush and melitzanosalata?

Both are roasted eggplant dips, but they have distinct personalities. Baba ganoush is Middle Eastern and incorporates tahini, which gives it a nutty, creamy richness. Melitzanosalata is Greek and uses olive oil and red wine vinegar instead, giving it a brighter, more rustic flavour with a chunkier texture. Both start by charring the eggplant over a flame for that essential smoky depth.

What are the best vegetarian Mediterranean dishes for a dinner party?

For an impressive vegetarian Mediterranean spread, the spanakopita, moussaka (made with lentils instead of meat), stuffed peppers, grilled cauliflower steaks, and loaded Greek zucchini boats are all stunning showpieces. Pair with a hummus and vegetable board, tabbouleh, and baba ganoush as starters, and Greek potatoes as the side for a complete feast that will impress every guest at the table.

About Sana Umer

I'm Sana Umer — the home cook behind every recipe on For Foodie Friends. I'm a Pakistani-American mom of two based in the US, and I've been cooking seriously for about a decade now, mostly because feeding a family every day is the fastest way to learn how to actually cook.

I'm completely self-taught. I learned by watching my mother in Pakistan, by burning a lot of food in my early years, and by paying attention to which recipes worked and which ones needed fixing. I don't specialize in just one cuisine — I cook the Pakistani dishes I grew up with, the American desserts my kids request, weeknight dinners, holiday roasts, and everything in between.

Every recipe is personally tested in my own kitchen, every word is written by me, and every photo is taken of food I actually made.

Hi, I'm Sana Umer — the home cook, recipe tester, and writer behind For Foodie Friends.

I'm a Pakistani-American mom based in the US. I learned to cook in two kitchens — my mother's in Pakistan, where I grew up watching whole spices bloom in oil, and my own kitchen now, where I cook for my husband and kids.

Every recipe on this site has been tested in my own kitchen, often more times than I'd like to admit, before it ever made it here. I cook a little bit of everything: the Pakistani comfort food I grew up with, the American desserts my kids beg for, weeknight dinners that need to come together fast, and the holiday spreads that take all day.

If a recipe is on this site, it earned its place. No ghostwriters, no AI shortcuts, no copy-paste from somewhere else — just real recipes from a real kitchen, written to actually work the first time you make them.

Welcome to my corner of the internet.
