The ranch goes inside the quesadilla rather than just for dipping — it tames the buffalo heat and adds creaminess that makes every bite more interesting. Cook over medium-low heat for the proper crisp-to-melt ratio, and resist the urge to crank the heat for speed.

  • 2 cups cooked shredded chicken
