  • Salt and pepper, to taste
  • Cheddar cheese sauce: 2 tablespoons butter + 2 tablespoons flour + 1½ cups whole milk + 1 cup sharp cheddar (shredded) + salt and pepper — make a roux, whisk in milk until smooth, simmer until thick, stir in cheese until melted

Instructions:

  1. Preheat oven to 375°F. Make the cheddar cheese sauce: melt butter, add flour and cook 1 minute. Whisk in milk gradually until smooth. Simmer until thick. Remove from heat and stir in the cheddar until completely melted. Season.
  2. Make the filling: combine ricotta, squeezed spinach, egg, parmesan, nutmeg, chilli flakes, salt, and pepper until smooth and well seasoned.
  3. Lay each lasagne sheet flat. Spread 2–3 tablespoons of filling across the sheet and roll into a tight cylinder. Place seam-side down in a greased baking dish. Repeat with all sheets.

  • 1 large head broccoli, cut into small florets
  • 1 (15 oz) can white beans (cannellini), drained
  • ½ cup orzo pasta, uncooked
  • 1 large onion, diced
  • 4 cloves garlic, thinly sliced
  • 5 cups chicken or vegetable broth
  • ½ teaspoon red chilli flakes
  • 3 tablespoons good olive oil
  • ½ cup parmesan, freshly grated, plus extra for serving
  • Salt and pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Sauté the onion for 5 minutes. Add the garlic and chilli flakes and cook 2 minutes until fragrant and the garlic is just golden. The chilli-infused oil is essential to the flavour of this soup.
  2. Add the broth and bring to a boil. Add the broccoli florets and orzo. Cook for 8 minutes until the orzo is tender and the broccoli is cooked through.
  3. Add the white beans and stir. Using the back of a spoon or a potato masher, roughly crush about one-third of the broccoli and beans against the side of the pot — this thickens the soup and creates a rich, slightly creamy consistency without any cream.
  4. Stir in the parmesan until melted. Season very generously with salt and pepper. Serve in deep bowls with a generous extra scatter of parmesan and fresh herbs. Drizzle with a little extra olive oil.

  • ¼ cup red onion, very finely diced
  • ¼ cup fresh parsley or basil, chopped
  • Dressing: ¼ cup extra-virgin olive oil + 3 tablespoons red wine vinegar + 1 teaspoon dried oregano + 1 teaspoon Dijon mustard + 1 clove garlic (minced) + salt and pepper — whisk until emulsified

Instructions:

  • ¼ cup parmesan, grated
  • Honey balsamic dressing: 3 tablespoons olive oil + 2 tablespoons balsamic vinegar + 1 tablespoon honey + 1 teaspoon Dijon mustard + 1 clove garlic (minced) + salt and black pepper — whisk together

Instructions:

  1. Cook the tortellini per package instructions. Drain and rinse under cold water until completely cooled. Drain thoroughly.
  2. Make the dressing: whisk together the olive oil, balsamic vinegar, honey, Dijon, garlic, salt, and pepper until the honey is completely dissolved and the dressing is smooth and emulsified.

  • 12 oz mafaldine or pappardelle pasta
  • 8 oz burrata cheese
  • Watercress pesto: 2 cups fresh watercress (packed) + ¼ cup pine nuts (toasted) + 2 cloves garlic + juice and zest of 1 lemon + ¼ cup extra-virgin olive oil + 2 tablespoons nutritional yeast or parmesan + flaky sea salt — blend until smooth

Instructions:

Ingredients:

  • 12 oz spaghetti
  • 6 oz guanciale (or substitute pancetta), cut into cubes
  • 3 large eggs + 2 egg yolks
  • ¾ cup pecorino romano, freshly grated
  • 1 tablespoon white miso paste
  • Generous amount of freshly cracked black pepper
  • Salt, for pasta water only

Instructions:

  1. Cook the spaghetti in well-salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, cook the guanciale cubes in a cold skillet — starting in a cold pan renders the fat slowly for maximum crispiness. Cook over medium heat for 6–8 minutes until deeply golden and crispy. Remove from heat. Let the fat cool for 2 minutes.
  3. Whisk together the eggs, egg yolks, pecorino, miso paste, and generous black pepper in a bowl until smooth. The miso paste should be completely incorporated.
  4. Add the hot drained pasta directly to the guanciale pan. Working off the heat, pour the egg mixture over the pasta and toss vigorously while adding pasta water a little at a time until a silky, creamy sauce coats every strand. The residual heat cooks the eggs — if the pan is too hot the eggs will scramble. Serve immediately with extra pecorino and black pepper.

Ingredients:

  • 12 oz rigatoni or penne, cooked al dente
  • 1 large onion, very finely diced
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon vodka (optional)
  • 1 (14 oz) can crushed tomatoes
  • ½ cup heavy cream
  • 1 teaspoon sugar
  • 1 teaspoon red chilli flakes (adjust to taste)
  • ½ cup parmesan, freshly grated
  • Fresh basil, for serving
  • Salt and black pepper, to taste

Instructions:

  1. Sauté the onion in butter and olive oil over medium heat for 8 minutes until very soft and translucent. Add the garlic and chilli flakes and cook 1 minute. Add the vodka if using and cook 1 minute until it evaporates.
  2. Add the crushed tomatoes and sugar. Season with salt and pepper. Simmer for 10 minutes until the sauce has thickened slightly. Add the heavy cream and stir to combine. Simmer 3 more minutes.
  3. Add the cooked pasta directly to the sauce with a splash of pasta water. Toss over medium heat for 2 minutes. Add the parmesan and toss until melted into a silky, glossy coating.
  4. Taste and adjust chilli and salt. Serve immediately topped with fresh basil and extra parmesan. The sauce should be rich, creamy, spicy, and completely irresistible.

  • ½ cup shelled pistachios, toasted
  • 1 cup fresh flat-leaf parsley (packed), washed and dried thoroughly
  • 1 clove garlic
  • Zest of 2 lemons
  • Flaky sea salt, to taste
  • Optional: a squeeze of lemon juice and a drizzle of olive oil for a looser consistency

Instructions:

  1. Toast the pistachios in a dry skillet over medium heat for 2–3 minutes until fragrant and lightly golden. Cool completely — toasting dramatically intensifies the flavour of the nuts.
  2. Place the cooled toasted pistachios, fresh parsley, garlic, lemon zest, and salt in a food processor.
  3. Pulse — do not blend continuously — until the mixture is finely chopped and well combined but still has a slightly coarse, textured consistency. Stop before it becomes a smooth paste. Gremolata should have texture and crunch, not be smooth like pesto.
  4. Taste and adjust salt and lemon zest. Use immediately as a topping — scatter generously over pasta, risotto, bruschetta, roasted vegetables, grilled fish, or lentil soup. Store in an airtight container in the refrigerator for up to 3 days.

FAQs

What is the difference between risotto, gnocchi, and pasta and how should each be cooked?

These three Italian staples are completely different in ingredient, technique, and texture. Risotto is made from short-grain Arborio rice that is cooked by gradually adding warm stock while stirring constantly — the stirring agitates the rice and releases its starch, creating the distinctive creamy, silky texture. The rice should be al dente at the centre when done. Gnocchi are small dumplings typically made from potato, flour, and egg — they cook very quickly in boiling water (2–3 minutes until they float) or can be pan-fried after boiling for a crispy exterior, or baked directly in sauce as in the one-pot vodka gnocchi recipe above. Pasta is made from durum wheat semolina and water or egg, extruded or rolled into hundreds of shapes. Fresh pasta cooks in 2–3 minutes while dried pasta takes 8–12 minutes. The key for all three is salt — pasta and gnocchi water should be seasoned as aggressively as seawater, and risotto stock should be well-seasoned before adding. The single most common mistake with all three is overcooking — al dente is always the goal.

What is gremolata and how is it different from pesto?

Gremolata and pesto are both Italian herb-based condiments but they are quite different in composition and texture. Gremolata is the simpler, more ancient Italian preparation — traditionally just three ingredients: flat-leaf parsley, lemon zest, and garlic. It contains no oil, no cheese, and no nuts in its classic form, though modern versions like the pistachio gremolata above add nuts for richness and crunch. It is always finely chopped or very coarsely pulsed, never blended smooth. Gremolata is traditionally served as a finishing garnish scattered over braised dishes like osso buco, and its brightness cuts through rich, fatty dishes beautifully. Pesto, by contrast, is a blended sauce — most famously basil, pine nuts, parmesan, garlic, and olive oil — that is used as a pasta sauce or spread. Pesto is richer, creamier, and more substantial than gremolata. Gremolata is a condiment and garnish; pesto is a sauce. Both are extraordinary but serve very different purposes.

How do I make a proper carbonara without scrambling the eggs?

Authentic carbonara contains no cream — the sauce is created entirely from eggs, cheese, pasta water, and guanciale fat. The technique that prevents scrambling is controlling temperature precisely. The eggs must never come into contact with direct heat — they should be cooked only by the residual warmth of the pasta and pan. Always remove the pan completely from the heat before adding the egg mixture. The pasta should be hot but the pan should not be. Add the egg-cheese mixture and toss vigorously and continuously while adding pasta water a tablespoon at a time — the pasta water contains starch that emulsifies the sauce and the agitation distributes the heat evenly so the eggs cook gradually into a silky cream rather than scrambling into curds. Work quickly — the sauce sets as it cools. If the sauce becomes too thick, a splash more pasta water loosens it immediately. Freshly cracked black pepper is not optional — it is a core flavour component of carbonara and should be ground very generously.
